About This Pumpkin Spice Cookies Recipe
- These Cookies are chewy and soft in the center, and the outside has a soft crunch.
- The secret to these delicious cookies is the browning of the butter. See how to do that in the Brown Butter Frosting post. Brown butter brings a unique and distinctly nutty flavour to the recipe. It has a depth of colour and tastes you cannot see in regular butter.
- This pumpkin spice cookie recipe uses one egg yolk. The egg yolk adds bonding and chewiness to the cookies' body.
- One crucial point in this recipe is to use Pumpkin Puree instead of Pumpkin Pie Filling. Also, the puree should not have any runny liquid. To remove all the juice from the pumpkin puree, put the entire can into a bowl or dish and place a thick paper towel on top to absorb as much water as possible. This will give these cookies the best chewy texture. Excess juice will negatively impact the texture of the cookies.
- The spice we use here is the Warm Vanilla Spice Blend from the Spice Blends post. This blend contains a soft Vanilla aroma in addition to other warm spices.
- This Pumpkin Spice Cookie batter does not require chilling. Before placing the cookies in the oven, roll each dough ball in the sugar-spice coating. This will give the cookies extra flavour and crunch.

Pumpkin Spice Cookies

Ingredients
For The Cookies
- 1 cup Butter
- 1¼ cup Brown sugar , Packed
- ½ cup Pumpkin puree, Reduced
- 1 Egg yolk
- 2 tablespoon Maple syrup
- ½ tablespoon Vanilla extract
- 2¼ cup All-purpose flour, Spooned and leveled
- ½ teaspoon Baking powder
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 2 tablespoon Warm vanilla spice, See notes
- ½ teaspoon Ginger
For The Coating
- 1 teaspoon Warm vanilla spice, See notes
- ½ teaspoon Cinnamon
- 2 tablespoon Sugar
- 1 tablespoon Brown sugar
Instructions
- Place the butter in a light color saucepan and heat it until the butter starts to change color and small brown specks appear. Put the butter aside to cool down.1 cup Butter
- Preheat the oven to 350℉, and line two baking sheets with parchment paper. Set them aside.
- Remove the excess juice from the pumpkin puree. Pour the puree into a bowl and place a thick piece of paper towel on it. We need ½ cup of reduced puree.½ cup Pumpkin puree
- Preheat the oven to 350°F, and line the baking sheets with parchment paper.
- Whisk all the dry ingredients and set aside.2¼ cup All-purpose flour, ½ teaspoon Baking powder, 1 teaspoon Baking soda, ½ teaspoon Salt, 2 tablespoon Warm vanilla spice, ½ teaspoon Ginger
- using a whisk In a large bowl beat the brown sugar and brown butter.1¼ cup Brown sugar, 1 cup Butter
- In a separate bowl mix the pumpkin puree, maple syrup, vanilla, and egg yolk. Mix until smooth and well blended.1 Egg yolk, 2 tablespoon Maple syrup, ½ tablespoon Vanilla extract, ½ cup Pumpkin puree
- Add the above mixture to the sugar/ butter mixture and mix.
- Gradually add the dry ingredients to the mixture and gently mix.
- Scoop about ¼ cup of the cookie dough into small balls. Roll the balls in the sugar-spice mixture,1 teaspoon Warm vanilla spice, ½ teaspoon Cinnamon, 2 tablespoon Sugar, 1 tablespoon Brown sugar
- Place the balls on the baking sheets. Leave at least 2-inch space. these cookies will spread. Bake for 13-15 minutes. Cookies are ready when the edges are set. the center might look raw, but they keep baking after removing from the oven.
- Let them cool on the baking sheet, then transfer them to the cooling rack to cool completely.
