    These Spice Linzer Cookies are delicious, flavorful, and super easy to make. These cookies can be filled with jams, nut butter, or caramel.

    This cookie recipe has the same base as Spice Cookies With Maple Glaze, without the glaze topping. The Beauty of this Spice Linzer Cookies recipe is the variety of shapes and sizes. Depending on the occasion or the season, by using the proper cookie cutters, you can make a lot of different cookies. Also, the inside filling can vary from jam to buttercream or even straight caramel sauce.

    About This Spice Linzer Cookie Recipe

    • This recipe is the base of a range of Linzer cookies. Meaning you can eliminate the spice from the recipe and make just plain cookies. Or by adding some shredded coconut, you can have coconut Linzers.
    • The other cool thing about this recipe is the shapes that you can make out of this recipe is endless. Use pumpkin or maple leaf cookie cutters, and create some Fall cookies. Use a star or snowflake cutter to make the Christmas cookies. So let your creativity go wild.
    • I am using Apple Butter to fill up these cookies. However, the possibilities are endless. What you put in the middle of these cookies again can be anything from jams, nut butter, caramel, or Duce De Leche.
    • The ingredients are very basic and no fancy equipment is required here.
    • This cookie dough requires chilling time because it is more on the soft side, and as a result the cookies have a soft texture that melts in your mouth.

    How To Make These Cookies

    • Prepare the basic cookie dough, wrap it in cling wrap, and chill for two hours.
    • Flour dust your surface, and roll out the cookie dough to ¼ inch thickness.
    • Using your favorite cookie cutter, cut enough cookies. Because we are planning to put some apple butter in between the cookies, make half of the cookies with a hole design in the center.
    • Bake the cookies and let them cool down. Place about one teaspoon of apple butter in the center of the flat cookie, then place the cookie with a hole in the center, over it. Let cookies chill for ten minutes.

    Ingredients
     

    • 1 Batch Spice Cookie dough, See notes
    • ¾ cup Apple Butter, See notes

    Instructions
     

    • Prepare the basic dough. Wrap in the cling wrap, and chill for two hours.
      1 Batch Spice Cookie dough
    • Preheat the oven to 350°F. Roll out the cookie on the floured surface to ¼ thickness.
    • Using the cookie cutter, cut out the dough. Make sure half of the cookies are flat and half have a hole design in the center.
    • Bake the cookies for 10-12 minutes or until the edges are slightly golden. Let the cookies cool down for 10 minutes, then transfer them to the cooling rack and cool them completely.
    • Place about 1 teaspoon of the apple butter in the center of the flat cookie and place the cookie with the whole design on top.
      ¾ cup Apple Butter
