How To Make This Recipe
- start with melting the white chocolate. be sure to use high-quality chocolate, and not chocolate chips.
- Be Sure the cream cheese is at room temperature. Leave it out of the fridge a few hours ahead.
- Crush the Biscoffs to a very fine crumb. Add the powdered sugar and spices to this crumb, and mix well.
- Soften the cream cheese then add the melted chocolate and mix well.
- Add the crumb mixture and mix everything well. The mixture should look smooth.
- Make small balls out of the mixture. It is up to you how large these truffles are, but I recommend going for walnut size.
- To make the chocolate cover, melt the dark chocolate over a double boiler or in the microwave. on 15-second intervals. Let the chocolate slightly cool down.
- Dip the truffles into the melted chocolate and remove them with a small slotted spoon and leave on a rack to drip the excess chocolate.
- You can garnish the top with coarse sea salt or with a small amount of Biscoff crumb.

Ingredients
For The Truffles
- ½ cup White chocolate , Melted
- 1 cup Biscoff, Crushed, about 15 cookies
- 1 teaspoon Warm Vanilla spice, See notes
- ¼ cup Cream cheese, Room temperature
- 2 tablespoon Powdered sugar, Sifted
- ¼ teaspoon Salt
- 1 teaspoon Vanilla extract
- ¼ cup Pumpkin puree, Room temperature
For The Chocolate Coating
- 1 cup Dark chocolate, Chopped
- 1 tablespoon Butter
- 1 tablespoon Biscoff crumb or sea salt- optional, For garnishing
Instructions
How To Make The Truffles
- Melt the white chocolate in a double boiler until smooth, and let cool down.½ cup White chocolate
- In a food processor crush the Biscoffs to a very fine crumb. Transfer to a bowl and sift in the spice, powdered sugar, and salt.1 cup Biscoff, 2 tablespoon Powdered sugar, ¼ teaspoon Salt, 1 teaspoon Warm Vanilla spice
- Soften the cream cheese in the food processor, then add the pumpkin puree and blend.¼ cup Cream cheese, ¼ cup Pumpkin puree
- Transfer the mixture into a bowl, add the Biscoff mixture, melted white chocolate, and vanilla extract, and mix very well.1 teaspoon Vanilla extract
- Make small balls of walnut size, place them on a tray and leave them in the fridge for 10-15 minutes.
Make The Chocolate Coating
- Put both dark chocolate and butter in a saucepan and place on medium heat. Stir occasionally until smooth and lump-free. Transfer to a bowl with a wide rim.1 cup Dark chocolate, 1 tablespoon Butter
- Dip the truffle balls into the melted chocolate one at a time. Remove them from the chocolate with a slotted spoon and leave them on a rack to drip the excess chocolate.
- Before the chocolate is hardened, sprinkle some salt or Biscoff crumb on top.
