- The other ingredients are just what we use in our usual baking. This recipe requires no fancy ingredients.
- These Gingerbread Cupcakes finish with a creamy, tangy, and super silky cream cheese frosting.
- This cream cheese frosting contains cream cheese, butter, powdered sugar, vanilla extract, and a small amount of Meringue Powder. Meringue powder adds structure and stability to the buttercream.
How To Make These Gingerbread Cupcakes
- Start by beating the butter and sugar. This should take a good 5 minutes to incorporate as much air into the batter as possible.
- Add the eggs one at a time and beat well after each one.
- Add in the molasses and vanilla extract and mix well.
- Add the end add the dry ingredients, including the spices. Do not overmix.
- Fill up the cupcake tray and bake for 15-18 minutes. Let cool down completely before frosting.
Cream Cheese Frosting
- Beat the butter until pale and fluffy, about 3-5 minutes.
- Mix the Meringue Powder and spices into ¼ cup of powdered sugar and it to the butter. Using Meringue Powder is optional but recommended.
- Add the rest of the powdered sugar in ¼ of a cup and beat well.
- Let the mixer go on low speed, and add the cream cheese in small amounts.
- Add Molasses and beat the batter well.
- Add the vanilla extract and beat the mixture well until it is all smooth and creamy.

Ingredients
For The Ginger Bread Cupcakes
- ½ cup Butter, Room temperature
- ⅔ cup Sugar
- 2 Eggs, Room temperature
- 2 teaspoon Vanilla extract
- ½ cup Molasses
- 2 cups All-purpose flour, Spooned and leveled
- 1 teaspoon Baking soda
- ¼ teaspoon Salt
- 1 teaspoon Ginger
- ½ teaspoon Cinnamon
- ¼ teaspoon Clove
- 1 cup Milk, Room temperature
For The Cream Cheese Frosting
- 8 ounce Cream cheese, Room temperature
- 1 cup Butter, Room temperature
- 1 teaspoon Vanilla extract
- ½ teaspoon Meringue powder, Optional
- 3½ cup Powdered sugar, Sifted
- ⅓ cup Molasses
- ½ teaspoon Gingerbread man spice, See notes
- 2-3 tablespoon Heavy cream
- 12 Gingerbread man cookies, See notes
Instructions
How To Make The Cupcakes
- Preheat the oven to 375°F, and line the cupcake pan with the liner.
- Mix the dry ingredients and set aside.2 cups All-purpose flour, 1 teaspoon Baking soda, ¼ teaspoon Salt, 1 teaspoon Ginger, ½ teaspoon Cinnamon, ¼ teaspoon Clove
- Beat the butter and sugar for 4-5 minutes until light and fluffy.⅔ cup Sugar, 1 cup Butter
- Add the eggs one at a time and mix well after each one.2 Eggs
- Add the vanilla extract, and molasses and mix.2 teaspoon Vanilla extract, ½ cup Molasses
- Switch to a rubber spatula, add ⅓ of the dry ingredients and gently mix.
- Add ½ of the milk and mix. Repeat these two steps until all the flour and milk are added. Be sure to start and finish with dry ingredients.1 cup Milk
- Scoop the batter into the liners up to ⅔ of their capacity. Bake for 15-18 minutes. Let cool in the pan for 10 minutes. Then transfer to the cooling rack to cool down completely before frosting.
How To Make The Frosting
- Put the cream cheese and butter out of the fridge a few hours before baking these cupcakes.
- Using the paddle attachment, beat the butter until pale and fluffy, about 3-5 minutes.½ cup Butter
- Mix the Meringue Powder and spices into ¼ cup of powdered sugar and add it to the butter. Using Meringue Powder is optional but recommended. Add the rest of the powdered sugar in ¼ of a cup and beat well.½ teaspoon Meringue powder, 3½ cup Powdered sugar, ½ teaspoon Gingerbread man spice
- Let the mixer go on low speed and add the cream cheese in small amounts. Add the vanilla extract and beat the mixture well until it is all smooth and creamy.8 ounce Cream cheese, 1 teaspoon Vanilla extract
- Add Molasses and beat the batter well.⅓ cup Molasses
- If the frosting is stiff, add 2-3 tablespoons of heavy cream to make it spreadable and smooth.2-3 tablespoon Heavy cream
- Place a small gingerbread man cookie on the top of the frosting. If you do not have small cookies, halve one and place it on each cupcake.12 Gingerbread man cookies
