Beat the butter and sugar for 4-5 minutes until light and fluffy.
⅔ cup Sugar, 1 cup Butter
Add the eggs one at a time and mix well after each one.

Add the vanilla extract, and molasses and mix.

Switch to a rubber spatula, add ⅓ of the dry ingredients and gently mix.
Add ½ of the milk and mix. Repeat these two steps until all the flour and milk are added. Be sure to start and finish with dry ingredients.

Scoop the batter into the liners up to ⅔ of their capacity. Bake for 15-18 minutes. Let cool in the pan for 10 minutes. Then transfer to the cooling rack to cool down completely before frosting.
How To Make The Frosting
Put the cream cheese and butter out of the fridge a few hours before baking these cupcakes.
Using the paddle attachment, beat the butter until pale and fluffy, about 3-5 minutes.
½ cup Butter
Mix the Meringue Powder and spices into ¼ cup of powdered sugar and add it to the butter. Using Meringue Powder is optional but recommended. Add the rest of the powdered sugar in ¼ of a cup and beat well.
½ teaspoon Meringue powder, 3½ cup Powdered sugar, ½ teaspoon Gingerbread man spice
Let the mixer go on low speed and add the cream cheese in small amounts. Add the vanilla extract and beat the mixture well until it is all smooth and creamy.
8 ounce Cream cheese, 1 teaspoon Vanilla extract
Add Molasses and beat the batter well.
⅓ cup Molasses
If the frosting is stiff, add 2-3 tablespoons of heavy cream to make it spreadable and smooth.
2-3 tablespoon Heavy cream
Place a small gingerbread man cookie on the top of the frosting. If you do not have small cookies, halve one and place it on each cupcake.
