    About This Recipe

    • These cookies call for simple and essential ingredients, and no fancy ingredients here!
    • These cookies are somewhere between a ginger cookie and a chocolate cookie.
    • The recipe calls for some warm spices, such as ginger and cinnamon. These are winter/holiday cookies, for sure!
    • This recipe also has molasses, making the cookies very moist and chewy.
    • This recipe has a good amount of espresso, making these cookies super flavorful. You can taste the coffee flavor in each bite.
    • Another ingredient that plays a role in the softness of these cookies is brown sugar. Brown sugar is known for making baked goods extra soft and moist!

How To Make These Espresso Chocolate Cookies

    • Start melting the butter on medium heat, and once the butter is melted, remove it from the oven. Add in the espresso powder, spices, and cocoa powder. Let the butter mixture sit for a few minutes to cool down. This makes the mixture bloom.
    • Mix the brown sugar, granulated sugar, and molasses. Now add the butter mixture to the sugar mixture and whisk vigorously. The mixture will look broken but become homogenous as you whisk.
    • Add in the one egg and vanilla extract.
    • Whisk the mixture until it looks silky, like chocolate ganache!
    • Whisk the flour, baking soda, and salt in a separate bowl. Add this mixture to the butter mixture and gently mix with a spatula.
    • Cover the dough and chill it for at least an hour.
    • Scoop the dough into a shape of a ball size of a small tangerine. Roll each ball in a mixture of sugar and ginger, and bake.
