    • Just like any other sugar cookie recipe, we start by creaming the butter and sugar. This step is essential because it helps the sugar dissolve with butter and, breaks down the butter pieces, and aerates the batter.
    • Next, add in the eggs and both extracts. Beating the batter after adding the eggs is also very important. Eggs need to incorporate fully into the batter to make the bonding among the other ingredients.
    • This Chocolate Sprinkle Thumbprint Cookie recipe calls for ¼ cup of cocoa powder. Sift the cocoa powder with the flour and other dry ingredients. This brings air to the batter and removes any lump from the cocoa powder.
    • Switch to a rubbing spatula, add the dry ingredients to the batter, and gently fold.

    • Use an ice cream scoop or your hands and make balls the size of a small tangerine. Place them on a lined baking sheet and chill them for 10 minutes. Yes! Only 10 minutes.
    • Bring them out of the fridge and roll them in the nonpareils sprinkles; if the sprinkles are not sticking to the cookie balls, no worries! Hold the cookie balls in your palms for a few seconds, then roll them in the sprinkles.
    • Place them back on the baking sheet and bake them for 9 minutes, then bring them out and push a Hershey kiss chocolate in the center of the cookies; put them back into the oven, and bake for another minute to slightly melt the chocolate kiss. Let them cool down.

    Ingredients
     

    • 1 cup Butter, Room Temperature
    • 1½ cups Sugar
    • 2¾ cups All-purpose flour, Spooned and leveled
    • ¼ cup Cocoa powder, Sifted
    • 1½ teaspoon Baking powder
    • ½ teaspoon Salt
    • 2 Eggs, Room Temperature
    • 1 teaspoon Vanilla extract
    • ¼ teaspoon Almond extract
    • ¾ cup Nonpareils sprinkles
    • 30 Hershey Kisses

    Instructions
     

    • Sift all dry ingredients and set aside.
      2¾ cups All-purpose flour, ¼ cup Cocoa powder, 1½ teaspoon Baking powder, ½ teaspoon Salt
    • Beat the softened butter and sugar until light and fluffy.
      1 cup Butter, 1½ cups Sugar
    • Add in the eggs, vanilla extrac, and almond extrat, and mix well.
      2 Eggs, 1 teaspoon Vanilla extract, ¼ teaspoon Almond extract
    • Switch to a rubber spatula and fold in the dry ingredients. Do not over mix.
    • Line two baking sheets with parchment paper. Use an ice cream scoop or your hand. Make small balls the size of a small tangerine. Place them all on one baking sheet- no need to space them. Place the baking sheet in the fridge for 10 minutes.
    • In the meantime, preheat the oven to 350°F. Roll the cookie balls in the sprinkles. If the cookies are too cold and sprinkles are not sticking to them, hold them in your palms for a few seconds to warm them up slightly.
      ¾ cup Nonpareils sprinkles
    • Place them on the cookie sheets and leave an inch of space between them. Bake them for 9 minutes, bring them out and gently press a Hershy's kiss in the center, and place them back into the oven and bake for another minue.
      30 Hershey Kisses
    • Let them cool down on the baking sheet, then transfer to the cooling rack to cool down completely.
