- These cookies are different from the Christmas Sugar Cookies I shared with you. These Pillowy Frosted Cookies have a fluffy and almost cakey texture.
- The ingredients are very basic and have no fancy ingredients.
- One ingredient that is very important to mention is sour cream. Sour cream adds a ton of flavor and moisture to the cookies. At the same time, adding the sour cream makes the cookie dough softer than the other cookie dough. As a result, this cookie dough needs to chill for at least two hours.
- These are cut-out cookies; we need to roll out the dough after chilling. One critical tip I can recommend is; to be generous with flouring your working surface. This dough can be sticky, but if you sprinkle enough amount of flour on the surface, it will be easily workable!
- This recipe calls for baking soda and baking powder to ensure a fluffy and pillowy texture.
- The flavor in these Pillowy Frosted Cookies comes from vanilla extract and lemon zest, and additional flavor can come from the frosting. You can flavor the frosting with any extract, such as raspberry or strawberry.

How To Make These Cookies
- Start with whisking all dry ingredients.
- Add the lemon zest to the sugar and rub it with your fingertips to release its aroma.
- Cream the butter with the sugar until the mixture is soft and fluffy. Add in the eggs and vanilla extract, and beat until all ingredients are well blended.
- Switch to a spatula, gently fold the dry ingredients, and mix.
- The cookie dough will be sticky, and that is okay. Divide the dough into two parts, wrap them in cling wrap, and chill for at least two hours.
- Flour dust the working surface, and roll out the dough to ¼ inch thickness. Use a medium size round cookie cutter and cut the cookies. Add more flour as needed. Place the cut cookies on a lined baking sheet and bake.
- Let the cookies cool down completely before frosting.
- To make the frosting beat the room-temperature butter and cream cheese until soft and creamy.
- Mix well with the powdered sugar, vanilla, and lemon extract.
- In the end, add one drop of soft pink and ½ drop of light orange gel food coloring to reach a soft blush pink.
- Use a small spatula or spoon to decorate the cookie surface. Sprinkle with silver pearls or any other sprinkles you like.

- 3 cups All-purpose flour, Spooned and leveled
- 1 teaspoon Baking soda
- ½ teaspoon Baking powder
- ¼ teaspoon Salt
- ½ cup Butter, Room temperature
- 1 cup Sugar
- 2 Eggs, Room temperature
- ½ cup Sour Cream
- 2 teaspoon Vanilla extract
- 1 tablespoon Lemon zest
For The Frosting
- ½ cup Butter, Room temperature
- ¼ cup Cream cheese, Room temperature
- 2-3 cups Powdered sugar, Sifted
- 1 teaspoon Vanilla extract
- 1 teaspoon Lemon extract
- 1 drops Pink and orange food coloring
- 1 tablespoon Silver sprinkles

How To Make The Cookies

- In a separate bowl, add the lemon zest to the sugar, and rub it with your fingertips to release the lemon aroma.1 cup Sugar, 1 tablespoon Lemon zest
- Beat the butter and sugar mixed with the lemon zest until it is creamy and soft.½ cup Butter
- Add the eggs, one at a time, and mix well. Add in the sour cream and vanilla and lemon extract. Mix everything well.2 Eggs, ½ cup Sour Cream, 2 teaspoon Vanilla extract
- Switch to a rubber spatula and gently fold in the dry ingredients until the dough is formed.
- Divide the dough into two portions and wrap them in cling wrap and chill for at least two hours.
- Generously dust the working surface with flour and roll out the dough. Use a medium size cookie cutter to cut the cookies. Bake them for 8-10 minutes.
- Let them cool down completely before decoraing.
How To Make The Frosting
- Beat the butter and cream cheese until well blended and soft.½ cup Butter, ¼ cup Cream cheese
- Add the powdered sugar in spoonfuls. Add enough sugar to reach your desired sweetness. Add the extracts.2-3 cups Powdered sugar, 1 teaspoon Vanilla extract, 1 teaspoon Lemon extract
- Add one drop of pink and half a drop of light orange to reach a soft blush color. When adding color to your dough or batter go very slowly to avoid making it too dark.1 drops Pink and orange food coloring
- Use a small spatula or spoon and decorate the cookie surface. For additional decoration, add some silver sprinkles.
