- This recipe calls for freshly squeezed lemon juice and zest. I am using Meyer lemons, which are juicier, sweeter, and taste more like a tangerine. Regular lemons are fine.

- One other ingredient that is important to talk about is sour cream. Sour cream contains fat and acidic properties. The acid in the sour cream brings a load of moisture and flavor to the loaf.

How To Make This loaf
- Beat the eggs with the sugar for a good two minutes. Our goal is to aerate the batter.
- Add the oil and mix well.
- Next, add the room-temperature sour cream.
- Add in the lemon zest and vanilla extract and mix well.
- Next, it is time for lemon juice to add to the mixture.
- Whisk the dry ingredients and gently fold them into the mixture.
- Last, add poppy seeds. Gently fold in the mixture.
- Pour the batter into the lined pan, dip the edge of a rubber spatula in melted butter or oil, and run it in the middle of the batter. This will allow the heat to penetrate into the batter and help the loaf bake better, making the loaf look beautiful.
- To make the glaze mix all the ingredients and pour over the cool loaf.

Ingredients
For The Loaf
- 4 Eggs, Room temperature
- 1½ cups Sugar
- ⅔ cup Sour cream, Room temperature
- 1½ tablespoon Lemon zest
- 3 tablespoon Lemon Juice, Freshly squeezed
- 2 teaspoon Vanilla extract
- 1 tablespoon Poppy seeds
- 2 cups All-purpose flour, Spooned and leveled
- 3 teaspoon Baking powder
- ½ teaspoon Salt
- ⅔ cup Oil, Or olive oil
For The Glaze
- 1 cup Powdered sugar
- 3 tablespoon Milk
- 2 tablespoon Lemon juice
- ¼ teaspoon Vanilla extract
- ½ teaspoon Corn syrup
Instructions
How To Make The Loaf
- Preheat the oven to 325°F and line a 9X5 loaf pan with parchment paper. Set aside.
- Beat the eggs and sugar for a good two minutes intil lighter in color.4 Eggs, 1½ cups Sugar
- Add the oil and mix well.⅔ cup Oil
- Add the sour cream, lemon zest and vanilla and mix.⅔ cup Sour cream, 1½ tablespoon Lemon zest, 2 teaspoon Vanilla extract
- Next, add the lemon juice and poppy seeds and mix well.3 tablespoon Lemon Juice, 1 tablespoon Poppy seeds
- Whisk the flour, baking powder, and salt and add to the above mixture. Gently mix.2 cups All-purpose flour, 3 teaspoon Baking powder, ½ teaspoon Salt
- Pour the batter into the lined pan. Dip the tip of a spatula into a bowl of oil and run it in the batter lengthwise. This will make the heat get into the loaf and bake better. Bake for 40-45 minutes. Let it cool down before glazing.
How To make The Glaze
- Mix all the ingredients until the mixture is smooth. If it is too runny add one tablespoon powdered sugar, and if it is too stiff, add a small amount of milk.1 cup Powdered sugar, 3 tablespoon Milk, 2 tablespoon Lemon juice, ¼ teaspoon Vanilla extract, ½ teaspoon Corn syrup
- Pour it over the cool loaf and let it set.
