    About This Red Velvet Cookie Recipe

    • This recipe is easy to prepare and contains all simple ingredients.
    • Add cocoa powder to any red velvet recipe, including cake, cupcakes, brownies, and cookies. Cocoa powder intensifies the red colour and makes it look more vibrant. Cocoa powder also adds a slight chocolatey flavour to the recipe.
    • These cookies contain flour, baking powder, eggs, and butter; as for the recipe liquid, this recipe calls for a small amount of buttermilk. Buttermilk contains acid, which activates the baking soda and adds flavour to the cookies.

    • These Red Velvet Cookies use both granulated and brown sugar. Brown sugar contributes to the deeper colour and makes the cookies moister.
    • This recipe calls for red gel food colour; add more colour if you prefer a more vibrant red.
    • One more critical step in making these cookies is to chill the dough for an hour. Chilling the dough prevents the cookies from spreading too much.
    • I rolled the cookie balls in red sugar crystals; however, you can use granulated sugar.

    How To Make These Cookies

    • Sift all dry ingredients, including the cocoa powder, and set them aside.
    • Cream the butter with two sugars; take your time with this step, as the mixture should become light and fluffy.
    • Add in the egg and vanilla extract. Mix well.
    • Next, add the buttermilk and beat the mixture well until the mixture is smooth.
    • Now add the gel food colour; if you like bright red cookies, add a bit more. I like this brand.
    • In the end, add the dry ingredients until no trace of flour remains. Do not overmix the dough.
    • Cover the dough with cling wrap and refrigerate for at least one hour.
    • Preheat the oven to 350 F, and make small balls out of the dough. I would recommend the size of a large walnut in its shell.
    • Roll each cookie ball in the red sugar crystals and place the balls on the lined baking sheet. Bake the cookies for 10-11 minutes. The cookies will start to expand and crack on top. Do not overbake them; they will get too dry if overbaked.
    • Let them cool off on the baking sheet, then transfer them to the cooling rack to cool completely.

    Ingredients
     

    • ½ cup Butter, Room temperature
    • ¾ cup Light brown sugar, Packed
    • ¼ cup Granulated sugar
    • 1 Egg
    • 1 teaspoon Vanilla extract
    • 1 tablespoon Buttermilk
    • 1½ cups All-purpose flour, Spooned & leveled
    • 1 teaspoon Baking soda
    • 2 tablespoon Cocoa powder
    • ½ teaspoon Espresso powder
    • ½ teaspoon Salt
    • 1 teaspoon Red gel food coloring
    • 1 cup Red coarse sugar, For rolling

    Instructions
     

    • Sift all dry ingredients and set aside.
      1½ cups All-purpose flour, 1 teaspoon Baking soda, 2 tablespoon Cocoa powder, ½ teaspoon Espresso powder, ½ teaspoon Salt
    • Use the paddle attachment and beat the butter until smooth, then add both sugars and beat until light and fluffy.
      ½ cup Butter, ¾ cup Light brown sugar, ¼ cup Granulated sugar
    • Add in the egg and vanilla extract and mix well. Scrape the sides as needed.
      1 Egg, 1 teaspoon Vanilla extract
    • Add in the buttermilk, and food coloring and mix thoroughly, You want to have a homogenous mixture not marbleing.
      1 teaspoon Red gel food coloring, 1 tablespoon Buttermilk
    • Switch to a rubber spatula, and slowly add in the dry ingredients and mix until the dough is formed. Chill the dough for one hour.
    • When ready to bake, preheat the oven to 350°F and line two baking sheets with parchment paper. Set them aside.
    • Use the palms of your hands and Make small dough balls, then roll each ball in the coarse red sugar. Make sure each dough ball is covered with sugar.
      1 cup Red coarse sugar
    • Place them on the baking sheet and bake for 10-12 minutes. The cookies are ready when their top is cracked and the edges are set. Do Not Overbake.
