How To Make These Cookies

- Next, add the buttermilk, and beat the mixture well until the mixture is smooth.

- In the end, add the dry ingredients until there is no trace of flour is seen. Do not overmix the dough.
- Cover the dough with cling wrap and refrigerate for at least one hour.
- Preheat the oven to 350 F, and make small balls out of the dough. I would recommend the size of a large walnut in its shell.
- Roll each cookie ball in the red sugar crystals, and place the balls on the lined baking sheet. Bake the cookies for 10-11 minutes. The cookies start to expand and crack on top. Do not overbake them. They will get too dry if overbaked.

Ingredients
- ½ cup Butter, Room temperature
- ¾ cup Light brown sugar, Packed
- ¼ cup Granulated sugar
- 1 Egg
- 1 teaspoon Vanilla extract
- 1 tablespoon Buttermilk
- 1½ cups All-purpose flour, Spooned & leveled
- 1 teaspoon Baking soda
- 2 tablespoon Cocoa powder
- ½ teaspoon Espresso powder
- ½ teaspoon Salt
- 1 teaspoon Red gel food coloring
- 1 cup Red coarse sugar, For rolling
Instructions
- Sift all dry ingredients and set aside.1½ cups All-purpose flour, 1 teaspoon Baking soda, 2 tablespoon Cocoa powder, ½ teaspoon Espresso powder, ½ teaspoon Salt
- Use the paddle attachment and beat the butter until smooth, then add both sugars and beat until light and fluffy.½ cup Butter, ¾ cup Light brown sugar, ¼ cup Granulated sugar
- Add in the egg and vanilla extract and mix well. Scrape the sides as needed.1 Egg, 1 teaspoon Vanilla extract
- Add in the buttermilk, and food coloring and mix thoroughly, You want to have a homogenous mixture not marbleing.1 teaspoon Red gel food coloring, 1 tablespoon Buttermilk
- Switch to a rubber spatula, and slowly add in the dry ingredients and mix until the dough is formed. Chill the dough for one hour.
- When ready to bake, preheat the oven to 350°F and line two baking sheets with parchment paper. Set them aside.
- Use the palms of your hands and Make small dough balls, then roll each ball in the coarse red sugar. Make sure each dough ball is covered with sugar.1 cup Red coarse sugar
- Place them on the baking sheet and bake for 10-12 minutes. The cookies are ready when their top is cracked and the edges are set. Do Not Overbake.
