Sift all dry ingredients and set aside.
1½ cups All-purpose flour, 1 teaspoon Baking soda, 2 tablespoon Cocoa powder, ½ teaspoon Espresso powder, ½ teaspoon Salt
Use the paddle attachment and beat the butter until smooth, then add both sugars and beat until light and fluffy.
½ cup Butter, ¾ cup Light brown sugar, ¼ cup Granulated sugar
Add in the egg and vanilla extract and mix well. Scrape the sides as needed.

Add in the buttermilk, and food coloring and mix thoroughly, You want to have a homogenous mixture not marbleing.

Switch to a rubber spatula, and slowly add in the dry ingredients and mix until the dough is formed. Chill the dough for one hour.
When ready to bake, preheat the oven to 350°F and line two baking sheets with parchment paper. Set them aside.
Use the palms of your hands and Make small dough balls, then roll each ball in the coarse red sugar. Make sure each dough ball is covered with sugar.

Place them on the baking sheet and bake for 10-12 minutes. The cookies are ready when their top is cracked and the edges are set. Do Not Overbake.
