    This delicious Blueberry Orange Bundt is moist, flavorful, and easy to make. Each bite contains a burst of blueberries and a subtle orange flavor. My mom used to make this Bundt cake on the weekends, and we all enjoyed it for our Saturday morning breakfast.

    About This Recipe

    • The combination of orange and blueberry flavors and aromas makes this Bundt flavorful and delicious.
    • This recipe uses straightforward ingredients in almost every cake recipe. This includes eggs, flour, butter, oil, etc.
    • Orange zest has a solid aromatic oil that, when released, creates the best flavoring in baked goods. We will rub the grated zest with granulated sugar to bring that beautiful aroma out of the orange zest. The coarse friction from the granulated sugar releases the oil from the orange grind. We need one large orange zest and juice.
    • As listed above, this recipe calls for butter and oil. Butter adds a ton of flavor, and oil is the source of fat and keeps the crumb moist longer.
    • Buttermilk and yogurt are acidic and work as a tenderizer, and make a balanced sweetness.
    • One ingredient that I would like to talk about is the blueberry. Blueberries play a big role in this Bundt cake's flavor and texture. You can use fresh or frozen blueberries. If using frozen, make sure not to thaw them. Thawing the berries makes their juice bleed out, making the batter dark.
    • To prepare the pan, I greased it with butter and sprinkled it with a mix of almond flour and sugar. Almond flour makes an excellent barrier between the pan and the batter and helps the Bundt o slide off the pan.

    How To Make The Blueberry Orange Bundt

    • Start by rubbing the orange zest into the sugar until the orange zest has released its aroma and oil.
    • Beat the eggs and the sugar mixture for 2-3 minutes until all is light and fluffy.
    • Mix the melted butter, oil, orange juice, yogurt, and buttermilk well.
    • Add the butter mixture to the egg mixture alternating with dry ingredients in three passes. Use a spatula to fold them together.
    • Toss one tablespoon of flour over the blueberries and make sure all the blueberries are coated with flour. Add them to the batter and gently mix.
    • Mix one tablespoon of almond flour and granulated sugar, toss at the bottom of the Bundt pan, and get it in every crease.
    • Pour the batter into the prepared pan. Tap the pan on the counter a few times to bring the air bubbles to the surface.
    • Bake for 40-50 minutes. Let it cool down in the pan for 15 minutes, then flip it to the cooling rack. Let it cool down before cutting.

    Ingredients
     

    For Coating The Pan

    • 1-2 tablespoon Almond flour
    • 1 tablespoon Granulated sugar

    For The Bundt cake

    • 1½ cups Granulated sugar
    • 4 Eggs, Room temperature
    • 2 teaspoon Vanilla extract
    • 2¼ cups All-purpose flour, Spooned and leveled
    • 2 teaspoon Baking powder
    • ½ teaspoon Salt
    • ¼ cup+1tbsp Butter, Melted
    • ¼ cup Oil
    • ⅓ cup Buttermilk, Room temperature
    • 1 tablespoon Orange zest
    • ¼ cup Orange juice, One large orange
    • ⅓ cup Greek yogurt
    • 1 tablespoon Flour, For coating blueberries
    • 1 cup Blueberries

    Instructions
     

    • Preheat the oven to 350F. Spray a 9 cups Bundt pan with oil or butter it. Mix the almond flour and one tablespoon granulated sugar and sprinkle all over the greased pan. Set it aside.
      1-2 tablespoon Almond flour, 1 tablespoon Granulated sugar
    • Whisk all dry ingredients and set it aside.
      2¼ cups All-purpose flour, 2 teaspoon Baking powder, ½ teaspoon Salt
    • Rub the sugar and the orange zest to release the orange aroma.
      1 tablespoon Orange zest
    • Use the whisk attachment and whisk the eggs, sugar , and vanilla extract for 2-3 minutes until the mixture is light, fluffy, and pale.
      1½ cups Granulated sugar, 4 Eggs, 2 teaspoon Vanilla extract
    • Melt the butter, add the oil, buttermilk, yogurt, and orange juice.
      ¼ cup+1tbsp Butter, ¼ cup Oil, ⅓ cup Buttermilk, ⅓ cup Greek yogurt, ¼ cup Orange juice
    • Start adding the dry ingredients alternating with wet ingredients. It will be three batches of dry and two passes of wet ingredients. Gently mix the batter. Use a spatula for more gentle mix.
    • Toss one tablespoon flour over the blueberries and get it over all the berries. Make sure all the berries are coated with the flour.
      1 tablespoon Flour, 1 cup Blueberries
    • Gently mix the berries into the batter. Pour the batter into the prepared pan. Bake for 40-50 minutes.
    • Let it cool down in the pan for 15 minutes. transfer to the cooling rack to cool down completely.
