About This Recipe
- These Raspberry Orange Scones call for a few essential ingredients such as; flour, baking powder, butter, milk, and salt; for the fruit, you have endless options. I used raspberry and orange, but you can replace the raspberries with blueberries or substitute orange with lemon. Strawberries are a perfect variation as well.
- Since these scones are topped with a sugary glaze, I like using raspberries because they have a sour zing that perfectly balances the sweetness.
- this Raspberry Orange Scones recipe uses orange zest and juice.
- The butter used in this recipe should be cold and right out of the fridge, and that is because chunks of cold butter will melt in the oven and create a flakey texture.
- Working with the dough is very important as well. Remember that we are making scones with a rough, flakey texture; however, if we knead the dough too much, the result will be similar to bread.
- The secret to a good Scone is cold butter and acting fast before the butter melts.
- This recipe leads to eight scones, but you can have more if you cut the dough into smaller portions.
- The Glaze is simple to make and can be plain or infused with orange extract.
How To Make The Raspberry Orange Scones
- Start by whisking all dry ingredients plus orange zest.
- Cut the cold butter into small cubes and add it to the flour, and use your fingertips or a pastry blender to cut the butter into the flour.
- The mixture should resemble coarse crumbs.
- If making Raspberry Orange Scones, toss the raspberries into the flour and gently flour coat them.
- In the end, add the liquids: vanilla extract, orange juice, and milk, but add the milk gradually until the dough comes together and is not crumbly anymore. If it is too wet, add a small amount of flour; if it is too dry, add a little milk.
- Gently gather the dough together to make a one-inch thick disk, and use a knife or bench scraper to cut the disc into 8 pieces. Place them on a lined baking sheet and bake.
- Mix the powdered sugar, milk, vanilla extract, and orange juice to make the glaze. The mixture should have the consistency of honey. Drizzle the glaze over the warm scones and set it for half an hour.
