These soft and chewy Cinnamon Bun Cookies combine Snickerdoodle Cookies and a cinnamon bun in one bundle. These cookies are delicious, decadent, and easy to make.
ABOUT THIS CINNAMON BUN COOKIE RECIPE
- This recipe uses all the ingredients that a classic Snickerdoodle cookies recipe needs. That includes butter, sugar, egg, flour, vanilla, and cinnamon.
- One item that may not be used in any ordinary cookie recipe is Cream of Tartar. Cream of tartar, when in contact with baking soda, acts similar to baking powder. It also contributes to the cookie's chewiness.
- The amount of cinnamon is totally up to you. You can roll them in the cinnamon sugar twice for a more spicy flavour.
- This cookie dough requires no chill time, which saves you time when making it!
- Here comes the fun part: the cinnamon bun component of these cookies.
- We make a small patch of separate cinnamon dough to make the cinnamon bun flavour stand out. The best way to do it is to make small balls the size of a hazelnut, chill them and then mix them into the original cookie dough.
- When we scoop the dough onto the cookie sheet, pieces of cinnamon dough will attach to the plain dough and create the patterns that you see in the above pictures.
HOW TO MAKE THESE COOKIES
The Cinnamon Dough:
- This part of the Cinnamon Bun Cookies recipe needs only four ingredients: butter, cinnamon, brown sugar, and flour.
- Cream the room-temperature butter, then add the cinnamon, brown sugar and flour. Mix well until the mixture is smooth and homogenous.
- Use your clean hands to make small balls the size of a hazelnut or half an inch in diameter.
- Place them on a baking sheet and freeze them for at least half an hour.
- Move on to making the plain dough.
The Plain Cookie Dough:
- Start by whisking all the dry ingredients, including flour, cinnamon, cream of tartar, baking soda, and salt. Make sure all is well blended.
- Cream the butter and sugar until creamy and light.
- Add in the eggs and vanilla extract.
- Mix in the dry ingredients. The dough may seem dry initially, but mix it with a spatula for smooth dough. Do not overmix the dough!
- Add in the frozen cinnamon dough balls and MIX WITH A SPATULA. DO NOT USE A MIXER. Make sure the balls are distributed in the plain dough evenly.
- Use a large cookie scoop to scope the dough. I use this Cookie Scoop.
- Roll the dough into small balls, roll each ball in the cinnamon sugar mixture, and bake.
- Right after you remove the baking sheet from the oven, use a large glass or a round cookie cutter to shape the cookies into a rounded shape and correct any uneven edges.

For The Cinnamon Bun Dough
- 5 tablespoon Butter, Room temperature
- ¾ cup Brown sugar
- 2 tablespoon Cinnamon
- ½ tablespoon Flour
For The Cookie Dough
- 1 cup Butter, Room Temperature
- 1⅓ cup Sugar
- 2 Eggs, Room Temperature
- 1 tablespoon Vanilla extract
- 3¼ cup All-purpose flour, Spooned and levelled
- 1 teaspoon Baking soda
- ¼ teaspoon Salt
- 1½ teaspoon Cream of tar tar

- ⅓ cup Sugar
- 2 tablespoon Cinnamon

How To Make The Cookie Dough
- Preheat the oven to 350℉, and line two baking sheets with parchment paper or baking mat. Set them aside.

- Cream the butter until pale and fluffy. Add the sugar and mix until the mixture is smooth.1 cup Butter, 1⅓ cup Sugar
- Add the eggs and vanilla extract and mix well.1 tablespoon Vanilla extract, 2 Eggs
- Use a rubber spatula to fold in the dry ingredients. Do Not Overmix.
- Add the frozen cinnamon dough balls and gently mix.
- Use a two-tbsp cookie scoop to scoop the dough into balls. Roll them into the sugar and cinnamon mixture.⅓ cup Sugar, 2 tablespoon Cinnamon
- Place the dough balls on the lined cookie sheet with a two-inch space between them.
- Bake the cookies for 10-12 minutes or until the edges are set. The center might still look raw, but that is fine. Cookies keep baking afterwards, too.
- Right after you remove the baking sheet from the oven, use a large glass or a round cookie cutter to shape the cookies into a rounded shape and correct any uneven edges.
- Let them cool down for 10 minutes, then transfer them to a cooling rack.
