About This Recipe
- These Gingerbread Man Blondies contain 1) The Blondie Recipe and 2) The Molasses Frosting.
- Each part has a ton of warm and aromatic Gingerbread flavours. To dictate all the seasonal flavours to both the blondies and the frosting, I am using all that screams holiday flavours, and that is Molasses and the right Spice Blend.
- I am sure you can buy the store-bought blends, but making your own is easy, cost-effective, and convenient. You will always have them in your fridge and ready to go 🙂
- In my post, Spice Blends, I am sharing a variety of different blends, from a Warm Vanilla Spice to Christmas Blends, that you can incorporate into a ton of different recipes.
- The recipes that require more depth and warmth in flavour are endless, such as Apple Hand Pie or Pumpkin Cardamom Loaf.
- Apart from the Gingerbread Man Spice Blend, this recipe has a simple list of ingredients which you probably have everything on hand already.
- Brown Sugar and Molasses add a large amount of deep colour and caramel flavour.
- All-purpose Flour, Egg, Vanilla extract and Baking Soda are the other ingredients.
- Let's talk about the frosting. These Gingerbread Man Blondies are topped with a creamy and lush Molasses Frosting. This frosting is an American Buttercream base and infused with Gingerbread Man Spice Blend and Mollasess. Each bite of these blondies brings a ton of Christmas flavour and feel to your mouth.
How To Make These Gingerbread Man Blondies
The Blondies;
- Sift all dry ingredients together and set them aside. That includes the Gingerbread Man Spice Blend.
- Melt the Butter and let it cool down but not solidify!
- Use the paddle attachment to beat the butter and Brown Sugar.
- Add the Egg and Vanilla Extract and beat well until everything is incorporated.
- Add in the Molasses and keep beating. Scrape the sides and the bottom of the bowl. Molasses tend to stick to the bottom of the bowl.
- Switch to a rubber spatula and fold in the dry ingredients. Do Not Overmix.
- Spread the batter into a lined and greased 8X8-inch pan and bake for 12-14 minutes.
Gingerbread Man Frosting
- Leave the butter and the cream cheese out of the fridge to come to room temperature.
- Beat the butter for 3-5 minutes until it is light, pale, and fluffy.
- Mix the spice into the sifted powdered sugar, add the sugar in ¼ of a cup, and beat well after each addition.
- If the frosting is not smooth and spreadable at this point, add two to three tablespoons of heavy cream to make it smoother.
- Add the molasses and mix well.
- Lastly, add two tablespoons of room-temperature cream cheese, one tablespoon at a time! Cream cheese adds flavour, a bit of salt and a creamy texture to the frosting.
- Let the blondie batch cool down before frosting it.
- You can decorate the top with some seasonal sprinkles.
