Preheat the oven to 350℉, line and grease an 8X8-inch pan. Set aside.
Sift all dry ingredients together set aside.
2 cups+2tbsp All-purpose flour, 1½ teaspoon Gingerbread Man Spice Blend, 1 teaspoon Baking soda
Melt the butter and let it cool down.
½ cup Butter
Use the paddle attachment and beat the butter and brown sugar until blended and light in colour.
1 cup Dark brown sugar
Add the egg and vanilla extract.
1 Egg, 1 teaspoon Vanilla extract
Add the molasses and mix well. Scrape the side and the bottom of the bowl. Molasses tend to stay at the bottom of the pan.
¼ cup Molasses
Switch to a rubber spatula and add the dry ingredients. Gently fold and mix them in. Do Not Overmix.
Spread the batter into the prepared pan and bake for 12- 14 minutes. The blondie is ready when the sides look set, and an insert comes out clean.
Let it cool down in the pan for half an hour, then transfer to the cooling rack and let cool down completely before frosting.
How To Make The Molasses Frosting
Beat the butter for 3-5 minutes until it is light, pale, and fluffy.
½ cup Butter
Mix the spice into the sifted powdered sugar, add the sugar in ¼ of a cup, and beat well after each additionles.
3 cups Powdered sugar, ½ teaspoon Gingerbread Man Spice Blend
If the frosting is not smooth and spreadable at this point, add two to three tablespoons of heavy cream to make it smoother.
2-3 tablespoon Heavy cream
Add the molasses and vanilla extract and mix well.
2 teaspoon Vanilla extract, ⅓ cup Molasses
Lastly, add two tablespoons of room-temperature cream cheese, one tablespoon at a time! Cream cheese adds flavour, a bit of salt and a creamy texture to the frosting.
2 tablespoon Cream cheese
Let the blondie batch cool down before frosting it. You can decorate the top with some seasonal sprinkles.
¼ cup Sprinkles
