    About These Molasses Cookies

    • This cookie recipe comes together very easily and requires only a handful of ingredients.
    • The cookie dough requires one hour of chilling time.
    • The list of ingredients includes Flour, Baking Soda, Salt, Apple Pie Spice, Butter, Brown sugar, Vanilla extract, Egg, and Molasses.
    • Let's break down the ingredients and talk about them a bit more! The first four ingredients are the dry ingredients that are the base of 99% of the cookie recipes.
    • The Apple Pie Spice recipe is in the Spice Blends post. The right amount of spices in this recipe makes these cookies delicious, flavourful, and seasonal. Making your own spice blend is convenient and ready to use when you need it. I am all for the homemade ingredients as much as possible.

    • What is a Molasses Cookies without Molasses? This ingredient adds a caramel flavour to the cookies as well as a ton of moisture and tenderness. I use this brand of Molasses.
    • Molasses is a thick substance principally obtained from the refining of  Sugarcane or Sugarbeet juice into sugar. Molasses vary in the amount of sugar, the method of extraction and the age of the plant. (Wikipedia)
    • Brown sugar plays a crucial role in the cookie's softness and chewiness, and that goes back to the Molasses content of this ingredient.
    • Butter is an essential and important ingredient in every cookie recipe. Butter has a unique flavour and is the main source of fat in these cookies.
    • This recipe calls for one Egg, which creates bonding in the recipe and has some fat content.
    • These Molasses cookies are rolled in a mixture of cinnamon and sugar, which gives them a crispy surface, and cinnamon adds to their flavour.

    How To Make These Cookies

    • Leave the butter out of the fridge for a few hours before making the cookies. Use the paddle attachment to beat the butter and sugar for a few minutes until it is all fluffy and light in colour.
    • Add in the egg, vanilla extract, and molasses and beat well. The mixture will become smooth and light brown in colour.
    • In a separate bowl, sift the flour, baking soda, apple pie spice, and salt. Switch to a rubber spatula, add the dry ingredients to the butter mixture and mix well.
    • Cover the cookie dough and chill for one hour.
    • Use your clean hands to make small balls the size of a tablespoon and roll each ball into the cinnamon sugar mixture.
    • Place the cookie dough balls on the lined baking sheets and bake for 8-10 minutes. They are done when the edges are set and the top starts to have cracks.
    • Let them cool down on the baking sheets for 5-10 minutes, then transfer them to the cooling rack and let them cool down completely.

    Ingredients
     

    For The Cookies

    • 2¼ cups+1 tbsp All-purpose flour, Spooned and levelled
    • 1 teaspoon Baking soda
    • 1½ teaspoon Apple pie spice, See notes
    • ¼ teaspoon Salt
    • ¾ cup Butter, Room temperature
    • 1 cup Dark brown sugar, Packed
    • 1 Egg, Room temperature
    • ¼ cup Molasses
    • 2 teaspoon Vanilla extract

    For Rolling

    • ¼ cup Granulated Sugar
    • ½ teaspoon Cinnamon

    Instructions
     

    • Use the paddle attachment to beat the butter and sugar for a few minutes until it is all fluffy and light in colour.
      ¾ cup Butter, 1 cup Dark brown sugar
    • Add in the egg, vanilla extract, and molasses and beat well. The mixture will become smooth and light brown in colour.
      1 Egg, 2 teaspoon Vanilla extract, ¼ cup Molasses
    • In a separate bowl, sift the flour, baking soda, apple pie spice, and salt. Switch to a rubber spatula, add the dry ingredients to the butter mixture and mix well.
      2¼ cups+1 tablespoon All-purpose flour, 1 teaspoon Baking soda, 1½ teaspoon Apple pie spice, ¼ teaspoon Salt
    • Cover the cookie dough and chill for one hour.
    • Preheat the oven to 350℉, and line two baking sheets with parchment paper or Baking mat.
    • Use your clean hands to make small balls the size of a tablespoon and roll each ball into the cinnamon sugar mixture.
      ¼ cup Granulated Sugar, ½ teaspoon Cinnamon
    • Place the cookie dough balls on the lined baking sheets and bake for 8-10 minutes. They are done when the edges are set and the top starts to have cracks.
    • Let them cool down on the baking sheets for 5-10 minutes, then transfer them to the cooling rack and let them cool down completely.
    • If you prefer crispier cookies, leave them in the oven for two more minutes.

      These cookies are amazing! So soft in the center & nice chewy on the outside! Love the combination of all the spices and of course my favorite the molasses!
