Use the paddle attachment to beat the butter and sugar for a few minutes until it is all fluffy and light in colour.
¾ cup Butter, 1 cup Dark brown sugar
Add in the egg, vanilla extract, and molasses and beat well. The mixture will become smooth and light brown in colour.

In a separate bowl, sift the flour, baking soda, apple pie spice, and salt. Switch to a rubber spatula, add the dry ingredients to the butter mixture and mix well.
2¼ cups+1 tablespoon All-purpose flour, 1 teaspoon Baking soda, 1½ teaspoon Apple pie spice, ¼ teaspoon Salt
Cover the cookie dough and chill for one hour.
Preheat the oven to 350℉, and line two baking sheets with parchment paper or Baking mat.
Use your clean hands to make small balls the size of a tablespoon and roll each ball into the cinnamon sugar mixture.
¼ cup Granulated Sugar, ½ teaspoon Cinnamon
Place the cookie dough balls on the lined baking sheets and bake for 8-10 minutes. They are done when the edges are set and the top starts to have cracks.
Let them cool down on the baking sheets for 5-10 minutes, then transfer them to the cooling rack and let them cool down completely.
If you prefer crispier cookies, leave them in the oven for two more minutes.
