About This Chocolate Strawberry Cake
- This chocolate cake uses my Forever Super Moist Chocolate Cake Fudge Frosting, an absolutely delicious, decadent cake.
- The frosting is infused with strawberry reduction, and we mix in some whipped cream to make it extra creamy.
- This is totally optional, but chopped strawberries are between the layers. Fresh strawberries add a ton of flavour and texture to this delicious cake.
- Topping the cake with fresh berries looks good esthetically and provides more fresh fruit 🙂
How To Make This Cake
Cake:
- We need to mix all the dry ingredients in one bowl. Sift the flour, cocoa powder, sugar, baking powder, baking soda, and salt. It is important to sift the cocoa powder to prevent lumps.
- Mix the eggs, buttermilk, oil, mayonnaise, and vanilla extract in a separate bowl.
- Fold in the dry ingredients. Be gentle, and DO NOT OVERMIX.
- Lastly, add the hot coffee and mix. The batter will be thin at this point, but that's okay.
- Evenly divide the batter into prepared pans, and bake for 30-40 minutes.
- Let the cake cool in the pan for 10 minutes. Then, remove it from the pan and place it on a cooling pan to cool completely.
Strawberry Reduction:
- Mix the strawberries, sugar, cornstarch, lemon zest, and water in a saucepan. Bring to a boil and simmer for a few minutes until the mixture thickens.
- Remove from the heat and add the vanilla extract. Strain the mixture to remove the pulp and strawberry seeds.
- Let it cool completely before adding to the frosting.
Frosting:
- For the frosting, beat the butter until light and fluffy. Mix the meringue powder into the sifted powder sugar and add the sugar to the butter, ¼ cups at a time.
- Add the vanilla extract and 1 tablespoon of heavy cream and mix.
- Add ¼ of the strawberry reduction, and mix. Continue adding the strawberry reduction until you reach the desired colour and flavour. If the buttercream becomes too runny, add some powdered sugar; if it is too dry, add more heavy cream.
- If you prefer a more enhanced strawberry flavour, add ½ teaspoon Strawbert Extract.
- Whip ⅓ cup whipping cream and gently fold it into the frosting for creamier frosting.

Ingredients
For The Cake
- 2½ cups All-purpose flour, Spooned and levelled
- 3 teaspoon Baking powder
- 1 tablespoon Cornstarch
- ½ teaspoon Salt
- 2 cups Granulated sugar
- ½ cup Oil
- ½ cup Sour cream, Room temperature
- 3 Eggs, Room temperature
- 1 tablespoon Vanilla extract
- 1 cup Milk, Room temperature
- ¼ cup Buttermilk
For The Strawberry Reduction
- 1 cup Strawberries, Washed and dried
- 1 tablespoon Cornstarch
- ¼ cup Granulated sugar
- 1 tablespoon Lemon zest
- 1 teaspoon Vanilla extract
For The Frosting
- 2-3 cups Powdered sugar
- 1 cup Butter, Room temperature
- 1 teaspoon Meringue powder
- ¼ teaspoon Salt
- 2-3 tablespoon Heavy cream
- 1 teaspoon Vanilla extract
- 1 cup Strawberries, Finely chopped
- ⅓ cup Whipping cream
Instructions
How To Make The Cake
- Preheat the oven to 350°F, grease 2X8 or 3X6-inch pans, and dust with flour set aside.
- Sift all the dry ingredients, excluding the sugar, and set aside.2½ cups All-purpose flour, 3 teaspoon Baking powder, 1 tablespoon Cornstarch, ½ teaspoon Salt
- Mix milk and the buttermilk, and set aside.1 cup Milk, ¼ cup Buttermilk
- With the stand mixer set on the whisk attachment, whisk together the oil, eggs, vanilla extract, and sugar until well combined. About 2-3 minutes.2 cups Granulated sugar, ½ cup Oil, 1 tablespoon Vanilla extract, 3 Eggs
- Add in the sour cream and mix.½ cup Sour cream
- Using a spatula, add ⅓ of the dry ingredients alternating with the milk mixture. Repeat this three times, starting and ending with the dry ingredients. Put the bowl back on the stand mixer and whisk the batter for only 15 seconds. DO NOT OVERMIX.
- Pour the batter into the prepared pans and bake for 25-30 minutes or until the insert comes out clean. Let them cool in the pan for 10 minutes and then transfer to a cooling rack. Let cool completely before frosting.
How To Make The Strawberry Reduction
- Mix the chopped strawberries, water, sugar, lemon zest, and cornstarch in a saucepan. On medium heat, keep stirring until the mixture starts to simmer; bring the heat down to low and let the liquid reduce. The mixture begins to thicken.1 cup Strawberries, 1 tablespoon Cornstarch, ¼ cup Granulated sugar, 1 tablespoon Lemon zest
- Remove from the heat and add the vanilla extract. Let the mixture chill thoroughly.1 teaspoon Vanilla extract
How To Make The Frosting
- In a bowl of the stand mixer fitted with a paddle attachment, beat the butter until light and fluffy. Sift the powdered sugar, meringue powder, and salt. Then, add this mixture to the butter, ¼ cup at a time.2-3 cups Powdered sugar, 1 cup Butter, ¼ teaspoon Salt, 1 teaspoon Meringue powder
- Add 1 tablespoon of the heavy cream, and the vanilla extract and beat for good two minutes.2-3 tablespoon Heavy cream, 1 teaspoon Vanilla extract
- Add ¼ cup of the strawberry reduction to the above mixture. Add as much as the mixture reaches the desired colour and strawberry flavour. If the mixture becomes too runny, add more powdered sugar, one tablespoon at a time. If it is too dry, add more heavy cream.
- Whip the cream until stif peaks form. Gently fold the cream into the frosting.
Assembly
- Place one cake layer on the turn table and cover the cake with a layer of frosting.
- Use a piping bag to pipe a border on the edge of the cake. Spread some of the strawberry reduction inside the border.
- Place 2 to 3 tablespoons of chopped berries in the center of the cake.1 cup Strawberries
- Place the second cake layer and repeat the above steps.
- Frost the sides and top of the cake with frosting and smooth it out with a spatula or bench scraper.
