    About These Apple Cranberry Muffins

    • The ingredient list is straightforward. You probably have everything on hand.
    • The recipe comes together easily; you do not even need a stand mixer. A hand whisk will do the trick.
    • We use brown sugar inside the muffin batter and Turbinado Sugar for the topping to give these Apple Cranberry Muffins the maximum crunch and texture.
    • The topping contains rolled oats for that extra texture, flavour, and crunch.
    • This recipe calls for plain yogurt and buttermilk. The acidity in these two ingredients, when in contact with the leavener (Baking soda, in this case), will create the fluffiest crumb.
    • I always use fresh cranberries, and the result is always a success.
    • Let's talk about apples. Braeburn, Golden Delicious, Granny Smith, McIntosh, Pink Lady, and Honeycrisp are the best baking apples.
    • The other ingredients are as essential as all-purpose flour, egg, salt, and vanilla extract.

    How To Bake The Perfect Bakery-Style Muffins

    Leave the batter on the counter for 15 minutes. Do the dishes while the batter is resting. Resting the batter helps to hydrate the flour and contributes to its fluffy and soft texture.

    2-Line the muffin pan in every other cavity, leaving one empty cavity between two muffin liners. This allows the heat to get to each muffin evenly and adequately.

    3-Start your oven at a higher temperature, 400F to 425F, and bake the muffins for 5 to 7 minutes. Then, bring the oven temperature down to 350F and bake them for another 13 to 15 minutes.

    How To Make These Muffins

    The Topping:

    • Mix oil, Turbinado Sugar, cinnamon, and oats and set aside.

    The Apple Cranberry Muffins:

    • Mix all dry ingredients in a large bowl, including all-purpose flour, baking soda, cinnamon, and brown sugar.
    • Mix egg, yogurt, buttermilk, vanilla extract, and oil separately.
    • Add the second bowl to the dry ingredient bowl and gently mix.
    • Dice the apples and add them to the batter along with cranberries. Gently fold them in, and do not overmix.
    • Leave the batter on the side for 15 minutes.
    • Line the muffin cavities in every other order.
    • Fill up the liners to the top.
    • Place about two teaspoons of the topping on each muffin.
    • Bake them at 400F for 10 minutes, then reduce the oven temperature to 350F and bake them for another 10 to 15 minutes until the top is golden and looks set.
    • Let them set in the pan for 10 minutes, then transfer them to the cooling rack to cool down fully.

    Ingredients
     

    For The Topping

    • ⅓ cup Turbinado Sugar
    • 3 tablespoon Oil
    • 4 tablespoon Rolled Oats
    • ½ teaspoon Cinnamon

    For The Muffins

    • 2¼ cups All-purpose flour, Spooned and levelled
    • 1 teaspoon Baking soda
    • 1 teaspoon Cinnamon
    • 1 cup Brown sugar, Packed
    • 1 Egg, Room temperature
    • 1 tablespoon Vanilla extract
    • ⅓ cup Oil
    • 1 cup Yogurt, Room temperature
    • ¼ cup Buttermilk, Room temperature
    • 3 Apples, Medium size- Diced
    • ¾ cup Cranberries, Fresh

    Instructions
     

    How To Make The Topping

    • Mix all the ingredients for the topping and set aside.
      ⅓ cup Turbinado Sugar, 3 tablespoon Oil, 4 tablespoon Rolled Oats, ½ teaspoon Cinnamon

    How To Make The Muffins

    • Mix all dry ingredients in a large bowl and set aside.
      2¼ cups All-purpose flour, 1 teaspoon Baking soda, 1 teaspoon Cinnamon, 1 cup Brown sugar
    • Mix egg, yogurt, buttermilk, vanilla extract, and oil separately. Add the second bowl to the dry ingredient bowl and gently mix.
      1 Egg, 1 tablespoon Vanilla extract, ⅓ cup Oil, 1 cup Yogurt, ¼ cup Buttermilk
    • We need 2 cups of diced apples for this recipe, which will be about three medium-sized apples. Dice the apples and add them to the batter along with the cranberries. Gently fold them in, and do not overmix.
      3 Apples, ¾ cup Cranberries
    • Leave the batter on the side for 15 minutes. Line the muffin cavities in every other order. Fill up the liners to the top. Place about two teaspoons of the topping on each muffin.
    • Bake them at 400℉ for 10 minutes, then reduce the oven temperature to 350℉ and bake them for another 10 to 15 minutes until the top is golden and looks set. Let them set in the pan for 10 minutes, then transfer them to the cooling rack to cool down fully.
