How To Make These Cookies
- Leave the butter out of the fridge for a few hours before making the cookies. Use the paddle attachment to beat the butter and sugar for a few minutes until it is all fluffy and light in colour.
- Add in the egg, vanilla extract, and molasses and beat well. The mixture will become smooth and light brown in colour.
- In a separate bowl, sift the flour, baking soda, apple pie spice, and salt. Switch to a rubber spatula, add the dry ingredients to the butter mixture and mix well.
- Cover the cookie dough and chill for one hour.
- Use your clean hands to make small balls the size of a tablespoon and roll each ball into the cinnamon sugar mixture.
- Place the cookie dough balls on the lined baking sheets and bake for 8-10 minutes. They are done when the edges are set and the top starts to have cracks.
- Let them cool down on the baking sheets for 5-10 minutes, then transfer them to the cooling rack and let them cool down completely.

Ingredients
For The Cookies
- 2¼ cups+1 tbsp All-purpose flour, Spooned and levelled
- 1 teaspoon Baking soda
- 1½ teaspoon Apple pie spice, See notes
- ¼ teaspoon Salt
- ¾ cup Butter, Room temperature
- 1 cup Dark brown sugar, Packed
- 1 Egg, Room temperature
- ¼ cup Molasses
- 2 teaspoon Vanilla extract
For Rolling
- ¼ cup Granulated Sugar
- ½ teaspoon Cinnamon
Instructions

- Preheat the oven to 350℉, and line two baking sheets with parchment paper or Baking mat.
- Use your clean hands to make small balls the size of a tablespoon and roll each ball into the cinnamon sugar mixture.¼ cup Granulated Sugar, ½ teaspoon Cinnamon
- Place the cookie dough balls on the lined baking sheets and bake for 8-10 minutes. They are done when the edges are set and the top starts to have cracks.
- Let them cool down on the baking sheets for 5-10 minutes, then transfer them to the cooling rack and let them cool down completely.
- If you prefer crispier cookies, leave them in the oven for two more minutes.
