About These Glazed Oatmeal Cookies
- This recipe uses All-purpose and Whole-wheat flour. Adding Whole-wheat flour to a cookie recipe makes the cookies softer, chewier, and more flavourful. These cookies are seriously chewy and delicious!
- The other ingredients include Quick-Rolled Oats, Baking powder and Soda, Eggs, Egg yolks, Butter, Brown Sugar, Vanilla extract, and Cinnamon.
- The Extra egg yolk makes the cookies more moist and flavourful.
- The baking process is very straightforward. The only thing that I would like to say is that this cookie dough needs to chill for one hour. Chilling the dough prevents the cookies from spreading too much.
- Let's talk about the glaze. This glaze requires only three ingredients: Powdered sugar, Milk, and Vanilla extract. The Glaze thickness depends on the powdered sugar and milk ratio. The glaze should not be too runny if you want to have that beautiful, broken look, so add more powdered sugar to have a thicker glaze.
How To Make These Cookies
- Just like any other cookie recipe, start by beating the room-temperature butter and brown sugar until smooth and creamy. Stop the mixer and scrape the bowl as needed.
- Add the eggs and yolk, one at a time and beat the mixture after each one.
- Add vanilla extract and mix well.
- Mix all dry ingredients, including the rolled oats and spices and add them to the butter mixture. Gently incorporate all the ingredients and scrape the bowl's bottom to mix everything well.
- Cover the cookie dough and chill it in the fridge for an hour.
- Preheat the oven to 350F and line two baking sheets with parchment paper or Baking Mat.
- Use an ice cream scoop to scoop about two tablespoons of the dough onto the baking sheet. Bake the cookies for 10-12 minutes and let them cool down on the baking sheet. Then, transfer them to the cooling rack and let them cool down completely before icing.
- Mix all the ingredients for the glaze and ensure it is not too thin. Gently dip the tops of the cookies into the glaze and let the glaze softly touch the cookies' surface. DO NOT submerge the cookies into the glaze. Let the glaze set for one hour.
