- If you are anything like me, you would love a moist and fluffy loaf. This loaf has half a cup of sour cream which brings a lot of moisture to the loaf.
- Also as the title suggests, there is one cup of rolled oats in the recipe, and what that does apart from the healthy component, gives volume and structure to the loaf.
- Okay, let's talk about the flavor in this loaf. Bananas give a lot of aroma and flavor to this recipe.
- Peanut butter adds healthy fat as well as a ton of flavor to any baked good. The richness of peanut butter runs through every bite of the cake.
- And oh my... yes, we add half a cup of chocolate chips to the recipe. I also added good generous amount of mini chocolate chips on top of the cake for additional chocolaty flavor and beautiful look.
INGREDIENTS SUBSTITUTION
- If there are any peanut allergies, you can replace the peanut butter with Nutella, or simply eliminate the peanut butter.
- You can add a cup of chopped roasted nuts such as pecans or walnuts to this recipe.
- I have semi-sweet chocolate chips in this loaf, however, this can be milk chocolate chips or any other chocolate chips.

Banana Peanut Butter Oat Chocolate Loaf
Delicious, fluffy and moist Banana Peanut Butter Oat Chocolate Loaf
Ingredients
- 1½ cup All-purpose flour
- 1 cup Rolled oats
- ½ cup Brown sugar, packd
- 2 teaspoon Baking powder
- ½ teaspoon Salt
- 1 Egg, lightly beaten, Room Temperature
- 2 Mashed Bananas
- ½ cup Sour cream, Room Temperature
- ½ cup Peanut butter
- ½ cup Oil
- ½ cup Semi-sweet chocolate chips
Instructions
- Preheat your oven to 375° F. Spray a 9×5" loaf pan or line with parchment paper.
- In a large bowl, whisk together the flour, oats, sugar, baking powder, and salt.1½ cup All-purpose flour, 1 cup Rolled oats, ½ cup Brown sugar, packd, 2 teaspoon Baking powder, ½ teaspoon Salt
- In a medium bowl, mash the bananas. Stir in the oil, peanut butter, sour cream and beaten egg. Add this mixture to the dry mixture and combine (DO NOT OVER MIX).2 Mashed Bananas, ½ cup Sour cream, ½ cup Peanut butter, ½ cup Oil, 1 Egg, lightly beaten
- Stir in the chocolate chips.½ cup Semi-sweet chocolate chips
- Transfer the batter to your prepared loaf pan and evenly spread out with a rubber spatula. Optional: sprinkle top with extra chocolate chips. Bake for 30 minutes then throw a piece of aluminum foil on the top of the loaf to loosely cover it. Continue baking for another 15-20 minutes or until a toothpick comes out mostly clean. Allow cooling for at least 30 minutes in the pan before removing. Then allow it to cool for another 30 minutes before slicing.
