These sticky rolls are very soft, delicious, and easy to make. Most home bakers are anxious about buns, sticky rolls, cinnamon rolls, etc. because we all assume that making the bun dough is not very easy. About This Recipe
- This recipe is not yeast-based, and the dough will rise only using leavenings such as baking soda and baking powder.
- This sticky roll recipe is using very simple and easy ingredients.
- The dough comes together in a few minutes and no chilling and processing are required.
- The filling that I used is chopped pecans, brown sugar, and cinnamon. Other nut combinations like walnuts or hazelnut are fine as well.
- These rolls are delicious if not glazed, although, I recommend glazing them for a softer and more moist result. Glazing gives them a nice shine too.
- This dough is more of a soft dough compared to the other Roll or bun recipes. I promise you, It will hold itself well when is baked.
How To Make The Sticky Rolls In A Pan
- We need to preheat the oven to 400°F. In a food processor, blitz the Cottage Cheese, yogurt, Sugar, melted butter, and vanilla extract until smooth and well blended.
- In a separate bowl mix the flour, baking powder, baking soda, salt, and lemon zest, and add to the cheese mixture. Process this mixture until a soft dough forms.
- Transfer the dough onto a lightly floured surface and knead a few times. At this point, the dough should not be sticky anymore and you should be able to round it up to a ball shape.
- Wrap the dough in plastic wrap and set aside until you prepare the filling.
- Combine the chopped pecans, cinnamon, and brown sugar.
- Roll out the dough into a rectangular shape of about 12X15 inches with ¼ inch thickness.
- Brush the surface of the dough with melted butter. Avoid buttering the edges. Spread the filling all over the dough.
- Start rolling the dough from the length. If the roll is thicker in the middle, roll it on the surface to make it all the same thickness throughout.
- Using a sharp knife, cut the roll into 12 slices.
- Grease an 8-inch pan with oil or butter, and cover with parchment paper.
- Place the slices in the pan and bake for 20-25 minutes, or until golden brown.
- While the rolls are baking, make the glaze. Whisk the powdered sugar, maple syrup, and vanilla extract until smooth and glossy.
- Pour the syrup over the hot rolls and serve warm.

Ingredients
For The Rolls
- ¾ cup Cottage cheese, 4% small-curd
- ⅓ cup Plain yogurt
- ¼ cup Sugar
- ¼ cup Butter, Melted
- 1 tablespoon Vanilla extract
- 2 cups All-purpose flour, Spooned and leveled
- 2 teaspoon Baking powder
- ¼ teaspoon Baking soda
- ¼ teaspoon Salt
For The Filling
- 2 tablespoon Butter, Melted
- 1 cup Pecans, Chopped finely
- ⅔ cup Brown sugar, Packed
- 1½ teaspoon Cinnamon
For The Glaze
- 1 cup Powdered sugar
- ¼ cup Maple syrup
- ½ teaspoon Vanilla extract
- ½ teaspoon Cinnamon, Optional
Instructions
How To Make The Rolls
- Preheat the oven to 400°F. Grease an 8-inch pan and line with parchment paper. Set it aside.
- Whisk together the flour, baking powder, baking soda, and salt, set aside2 cups All-purpose flour, 2 teaspoon Baking powder, ¼ teaspoon Baking soda, ¼ teaspoon Salt
- In a food processor, mix the cottage cheese, yogurt, sugar, butter, and vanilla extract until well blended and smooth.¾ cup Cottage cheese, ⅓ cup Plain yogurt, ¼ cup Sugar, ¼ cup Butter, 1 tablespoon Vanilla extract
- Add the flour mixture to the food processor and mix until a dough forms.
- Lightly flour a clean surface, and knead the dough a few times until all the ingredients are blended and you can form a large ball.
- Wrap the dough in a plastic wrapper and set it aside. No resting time is needed. Only set the dough aside until you make the filling.
How To make the Filling
- Mix the pecans, brown sugar, and cinnamon until all the pecans are covered with cinnamon and sugar.1 cup Pecans, 1½ teaspoon Cinnamon, ⅔ cup Brown sugar
How To Assemble
- Lightly flour dust a clean surface, and roll out the dough into a 12x15 inch rectangular shape. Add a little bit of flour under the dough if it is sticking to the surface.
- Brush the surface of the melted butter. Spread the filling evenly all over the dough.2 tablespoon Butter
- Start rolling the dough from the longer side. Pinch the first roll tightly to secure the filling inside the roll. If the center of the roll is thicker, roll the palms of your hand over the thicker area, to even out the roll all throughout.
- Cut the roll into 12 equal slices, and place on the prepared pan. If there is some space between them, it's okay. Once the rolls bake, the space will fill up.
- Bake the rolls in the oven for 20-25 minutes, or until golden brown.
Prepare The Glaze
- Mix the powdered sugar, maple syrup, vanilla extract, and cinnamon (If using) until the mixture is glossy and smooth.1 cup Powdered sugar, ¼ cup Maple syrup, ½ teaspoon Vanilla extract, ½ teaspoon Cinnamon
- Pour the glaze over the hot rolls. These rolls are more delicious when served warm.
