About This Banana Pecan Sheet Cake Recipe
- This sheet cake recipe uses spotted and fully ripen bananas. The old bananas make a perfect source of sugar, as a result, we add less sugar into the batter.
- We use buttermilk to add liquid as well as an extra tangy flavor to the finished Banana Pecan Sheet Cake.
- As the name of the recipe suggests we use one cup of pecan in this recipe. Pecans add more texture and flavor to this cake.
- Use of spices takes this cake's flavor to the next level. This recipe uses cinnamon, nutmeg, and cardamom. So delicious and flavorful!!
- Other basic ingredients are butter, eggs, flour, and leavening ingredients.
- Make sure to bake this sheet cake in a metal 9X 13 pan. I use this Pan

How To Make This Sheet Cake
- Put those spitted bananas aside for this delicious Banana Pecan Sheet cake. We need 2-3 bananas. Mash them and set them aside.
- Sift together the dry ingredients and the spices, and set aside.
- Beat the room temperature butter and both sugars until creamy and well mixed.
- Add the eggs and vanilla extract, and mix.
- Gradually add in the buttermilk and mix. The batter will look curdled. It is okay.
- Add the mashed bananas, and crushed pecans, mix well, then add the dry ingredients. DO NOT OVERMIX.
- Bake the sheet cake in a greased square pan. 9X13 inches. Let cool down completely before frosting.
How To Make The Frosting
- For making the frosting, leave the cream cheese long before starting the process. Beat the soft and room temperature cream cheese with the soft butter, until fully blended and smooth.
- Add in the clear vanilla extract. We use clear vanilla extract to have the most bright frosting. Vanilla Extract Clear Vanilla Extract
- Gradually add the powdered sugar to the cream cheese until the frosting reaches a smooth and spreadable texture.

For The Sheet Cake
- ¾ cup Butter, Room temperature
- 1 cup Brown sugar, Light and packed
- ½ cup Sugar
- 1 tablespoon Vanilla extract
- 3 Eggs, Room temperature
- 3 Bananas, Spotted
- 1 cup Pecans, Finely chopped
- 1½ cups Buttermilk, Room temperature
- 3 cups All-purpose flour, Spooned and leveled
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- ¼ teaspoon Salt
- ½ teaspoon Cinnamon
- ¼ teaspoon Cardamom
- ¼ teaspoon Nutmeg
For The Frosting
- ½ cup Butter, Room temperature
- 1 block Cream cheese, 8 ounce-Room temperature
- 3-4 cups Powdered sugar, Sifted
- ¼ teaspoon Salt
- 1 teaspoon Vanilla extract, Clear
- ½ teaspoon Cinnamon

How To Make The Sheet Cake
- Preheat the oven to 350°F. Grease a metal 9X13-inch baking pan and set it aside.
- Sift together all the dry ingredients and set them aside.3 cups All-purpose flour, ½ teaspoon Baking soda, ¼ teaspoon Salt, ½ teaspoon Cinnamon, ¼ teaspoon Cardamom, ¼ teaspoon Nutmeg, 1 teaspoon Baking powder
- Place the pecans on a baking sheet and place them in the oven for 10 minutes. Check on them after 5 minutes. Nut burns very easily. Let them cool.1 cup Pecans
- Beat the butter and both sugars until creamy.¾ cup Butter, 1 cup Brown sugar, ½ cup Sugar
- Add the eggs and beat well, Add the vanilla extract and mix well.3 Eggs, 1 tablespoon Vanilla extract
- Add the buttermilk. The batter will look curdled. It is okay.1½ cups Buttermilk
- Add the mashed bananas and crushed pecans.3 Bananas, 1 cup Pecans
- Add the sifted dry ingredients and mix. DO NOT OVERMIX.
- Pour the batter into the prepared pan and bake for 35-40 minutes. An insert should come out with a few small crumbs. Let the cake cool for 10 minutes then transfer to the cooling rack.
How To Make The Frosting
- Beat the cream cheese until smooth and lump-free.1 block Cream cheese
- Add the soft butter and mix. The mixture should be soft and silky.½ cup Butter
- In a small bowl mix one cup of powdered sugar with cinnamon and salt. Gradually add this to the above mixture and mix on low speed. Add powdered sugar until the mixture is spreadable and light.3-4 cups Powdered sugar, ½ teaspoon Cinnamon, ¼ teaspoon Salt
- Add the vanilla extract and mix. Frost the sheet cake once it is fully cooled down.1 teaspoon Vanilla extract
