About This recipe
- This Pumpkin Donut recipe comes together super quickly. I think the only ingredient that you might have to buy is a can of pumpkin puree. No, wait! If you are a Fall baker, you probably have a couple of those cans in your pantry.
- This recipe uses a ton of Fall spices such as Pumpkin Pie Spice, Cinnamon, and Ginger. Doesn't this scream Fall??
- We are baking here, no frying fuss and muss! Speaking of healthy baking 😉
- I have coated these Pumpkin Donuts with cinnamon sugar, however, You can glaze them with maple or cinnamon glaze.
- This recipe can be halved and baked in a mini donut pan.
How To Make These Pumpkin Donuts
- Before doing any steps, pour the pumpkin puree into a large bowl and cover it with a thick piece of paper towel. This will absorb the juice out of the puree and it would not add too much water to the recipe.
- Move on to whisking all the dry ingredients including all the spices.
- Beat the melted butter and the sugar, until well mixed.
- Add in the eggs, one at a time, and mix well after each addition.
- Next add the reduced pumpkin puree and vanilla extract.
- Using a spatula mix in the dry ingredients. Do not overmix.
- Oil spray the donut pan. Pour the batter into a piping bag and fill in the donut holes.

Pumpkin puree right out of the can contains a lot of water. We need to remove all that juice, and that is how we do it;
Pour the pumpkin puree into a large bowl and place a thick piece of paper towel on top of it to absorb the water out of the puree.
