Easy, delicious, and GF brownie cookies
My specialty is not making GF or Vegan recipes. However, I would like to have some recipes for users with some dietary restrictions. These gluten-free brownie cookies are very light, airy, easy to make, and super delicious.
About This Recipe
- This recipe uses very simple and basic ingredients that I am sure you already have in your pantry.
- As the recipe name suggests, these cookies are gluten-free and perfect for those avoiding gluten in their diet.
- I have added walnuts to this recipe for some additional flavour and crunch, but you can use pecans or even hazelnuts.
- This recipe does not contain any oil or butter! Healthy cookies. Yes?!
- These cookies expand quite a bit and are giant; feel free to make them smaller to bite-size.
- These Gluten-Free Brownie Cookies contain only egg whites; that is where all the expansion comes from. You can save the egg yolks for a different project.

How to Make These Gluten-Free Brownie Cookies
- We only need egg white for this recipe. Separate the egg whites and save the yolks for a different project, such as All Egg Yolk Cake.
- Toast the walnuts or any other nuts you are using. Spread the nuts on a baking sheet and place in a 350-degree oven for about 10 minutes until you can smell the aroma from the nuts.
- Whisk all the dry ingredients, including the cocoa powder.
- Start adding the egg whites to the dry ingredients, then add the toasted crushed nuts and chopped chocolate.
- The mixture might look slightly dry initially, but keep mixing until all the ingredients are well incorporated.
- Scoop the batter on the lined baking sheet and bake.
Disclaimer: I highly recommend using the measurements in grams & ml (instead of cups & spoons) for more accuracy and better results.

Gluten-Free Brownie Cookies

Ingredients
- 3 cups Walnuts, Chopped and toasted
- 4 cups Powdered sugar, Sifted
- 4 Egg whites
- ⅔ cup Cocoa powder, Sifted
- ½ cup Dark chocolate, Chopped
- 1 tablespoon Vanilla
- ¼ teaspoon Salt
Instructions
- Preheat the oven to 350°F. Spread chopped walnuts on a baking sheet and place in the oven. Toast for 10 minutes until slightly brown and fragrant. Let cool.3 cups Walnuts
- Line two baking sheets with parchment paper and set them aside.
- in a large bowl sift together the powdered sugar, cocoa powder, and salt.4 cups Powdered sugar, ⅔ cup Cocoa powder, ¼ teaspoon Salt
- Add in the egg whites and vanilla extract and mix with a rubber spatula.1 tablespoon Vanilla, 4 Egg whites
- Lastly, add the toasted walnuts, and chopped chocolate and mix.3 cups Walnuts, ½ cup Dark chocolate
- The mixture will look a bit dry, but keep mixing. I will become moist.
- Using an ice cream scoop, place scoops of dough on the lined baking sheets. Be sure to leave at least 2 inches of space between them.
- Bake for 15-18 minutes. Or until the surface starts cracking and the edges set.
- Let cool down on the baking sheet for 5 minutes, then transfer to the cooling rack.
