About This Apple Fritter Loaf Recipe
- This recipe calls for over a cup of diced apples. I recommend using a kind of apple with a bit of sourness. That tangy flavor makes a good balance with the sweets used in the recipe. I used " Granny Smith" Apple in this recipe.

- There is both granulated sugar as well as brown sugar in this recipe. Brown sugar contributes to the moisture and soft texture of the loaf.

- You can top this loaf with a delicious icing such as sour cream icing, and again the tanginess of the sour cream will match perfectly with the sweet bread.
How To Make This Loaf
- Peel the apples and dice them. We need bout two medium size apples.
- In one bowl mix the chopped apples, brown sugar, and the Fall spice. Set it aside. See the post on how to make your own spice blends. Spice Blends.
- In a separate bowl mix all the dry ingredients, and set aside.
- Using a mixer beat the brown butter, oil, and granulated sugar until fluffy and light.
- Add the eggs one at a time and mix well after each one.
- Add the milk and vanilla extract and mix.
- Add the dry ingredients to the above mixture and gently fold. Do not overmix, just until there is no trace of dry ingredients visible.
- Pour half of this mixture into the prepared pan, and add half of the apple mixture and all of the batter. Add in the other half of the batter and finish off with the remaining apples, and bake.

Apple Fritter Loaf

Ingredients
For The Loaf
- 1½ cup Apple, Diced
- ¼ cup Brown sugar
- 1 teaspoon Fall spice blend, See the post
- 1½ cup All-purpose flour, Spooned and leveled
- 2 teaspoon Baking Powder
- ¼ teaspoon Baking soda
- ¼ teaspoon Salt
- 1 cup Granulated sugar
- ½ cup Butter, Browned, See the post
- ¼ cup Oil
- 2 Eggs, Room temperature
- ½ cup Milk, Room temperature
- 1 teaspoon Vanilla
For The Icing
- 3 tablespoon Sour cream
- 1 teaspoon Vanilla extract
- 1 cup Powdered sugar, Sifted
- 2-3 tablespoon Milk
Instructions
How To Make The Loaf
- Preheat the oven to 350°F, and grease a 9X5 inch loaf pan and set aside.
- In a small bowl mix the chopped apples, brown sugar, and Fall spice. I recommend using Granny Smith apples.1½ cup Apple, ¼ cup Brown sugar, 1 teaspoon Fall spice blend
- In a separate bowl mix all the dry ingredients and set aside.1½ cup All-purpose flour, 2 teaspoon Baking Powder, ¼ teaspoon Baking soda, ¼ teaspoon Salt
- Using a mixer, beat the brown butter, oil, and granulated sugar until light and fluffy.1 cup Granulated sugar, ½ cup Butter, ¼ cup Oil
- Beat the eggs lightly then add them, one at a time, and mix well after each one.2 Eggs
- Add in the milk and vanilla extract and mix.½ cup Milk, 1 teaspoon Vanilla
- Using a spatula, fold in the dry ingredients and gently mix. DO NOT OVERMIX.
- Pour half the batter into the prepared pan and cover it with half the apple mixture. repeat this by adding the remaining batter over the apples and topping it with the remaining of apple mixture.
- Bake for 50-60 minutes. After 30 minutes tent the loaf with a piece of aluminum foil, and bake for another 20 minutes or until an insert comes out clean.
- Leave the pan on a cooling rack for 10 minutes, then transfer the loaf to the cooking rack and let cool completely.
How To Make The Icing
- Mix the sour cream, vanilla extract, and powdered sugar.3 tablespoon Sour cream, 1 teaspoon Vanilla extract, 1 cup Powdered sugar
- Add milk, one tablespoon at a time to reach the spreadable consistency.2-3 tablespoon Milk
- Let the loaf cool down completely, then drizzle the icing over the loaf.
