Preheat the oven to 350°F, and grease a 9X5 inch loaf pan and set aside.
In a small bowl mix the chopped apples, brown sugar, and Fall spice. I recommend using Granny Smith apples.
1½ cup Apple, ¼ cup Brown sugar, 1 teaspoon Fall spice blend
In a separate bowl mix all the dry ingredients and set aside.
1½ cup All-purpose flour, 2 teaspoon Baking Powder, ¼ teaspoon Baking soda, ¼ teaspoon Salt
Using a mixer, beat the brown butter, oil, and granulated sugar until light and fluffy.
1 cup Granulated sugar, ½ cup Butter, ¼ cup Oil
Beat the eggs lightly then add them, one at a time, and mix well after each one.
2 Eggs
Add in the milk and vanilla extract and mix.
½ cup Milk, 1 teaspoon Vanilla
Using a spatula, fold in the dry ingredients and gently mix. DO NOT OVERMIX.
Pour half the batter into the prepared pan and cover it with half the apple mixture. repeat this by adding the remaining batter over the apples and topping it with the remaining of apple mixture.
Bake for 50-60 minutes. After 30 minutes tent the loaf with a piece of aluminum foil, and bake for another 20 minutes or until an insert comes out clean.
Leave the pan on a cooling rack for 10 minutes, then transfer the loaf to the cooking rack and let cool completely.
