- When it comes to making muffins there are a few points to keep in mind, and promise you, these steps will make your experience much more positive!
- Always start with a hot oven. Set your oven to 425F, place your muffin pan in the oven, and after 5 minutes, bring the temperature down to 350F. The first high temperature causes a heat shock in the batter which results in a fast rise and higher dome in the muffins.
- The other point to remember when making muffins is to fill up the muffing liner close to the top. This also helps to reach that full and high dome. Baking muffins is very different from baking cupcakes. As you already know, we should fill the cupcake liner only to ⅔ of its capacity.
- Unlike cupcakes, muffin batter does not need to be aerated. What does that mean?? We do not need to use a stand mixer to beat the ingredients vigorously to create air. It is the opposite. For making muffins you only need a rubber spatula. Muffin batter does not require a ton of mixing and it is more of a ticker batter.
These muffins are filled with melted Nutella, however, you can fill them with melted Biscoff Cupcakes. See the above and below pictures.

Pumpkin Nutella Muffins
The most delicious, fluffy, and flavorful Pumpkin Nutella Muffins.
Ingredients
- 2 cups All-purpose flour, Spooned and leveled
- ½ teaspoon Baking powder
- 1 teaspoon Baking soda
- 1½ teaspoon Pumpkin pie spice, See notes
- ½ teaspoon Salt
- 1 cup Dark brown sugar, Packed
- ⅓ cup Oil
- ⅓ cup Butter, Melted
- 2 Eggs, Room temperature
- ¾ cup Buttermilk, Room temperature
- 1 cup Pumpkin puree
- ½ cup Nutella, Melted
- 1 tablespoon Vanilla extract
Instructions
- Preheat the oven to 425°F, and line the muffin pan cavities with liners.
- Whisk all the dry ingredients together, and set aside.2 cups All-purpose flour, ½ teaspoon Baking powder, 1 teaspoon Baking soda, 1½ teaspoon Pumpkin pie spice, ½ teaspoon Salt
- In a separate bowl mix the melted butter, oil, sugar, vanilla, and buttermilk until well combined. Lightly beat the eggs and add them to the mixture.1 cup Dark brown sugar, ⅓ cup Oil, ⅓ cup Butter, 2 Eggs, ¾ cup Buttermilk, 1 tablespoon Vanilla extract
- Add the pumpkin puree and mix.1 cup Pumpkin puree
- Make a well in the center of the dry ingredients and pour the wet mixture in. Gently fold the dry ingredients and mix.
- Fill up the muffin liners to almost full. Melt the Nutella in the microwave for 20-second intervals until pourable.½ cup Nutella
- Using a small spoon make a hole in the center of the muffin batter and fill it up with melted Nutella.
- With the tip of a pairing knife make swirls in the batter and Nuttela. You can drizzle more Nutella on top.
- Bake in the 425°F oven for 5 minutes, then bring the temperature down to 350°F and rotate the pan. Bake for another 9-10 minutes.
- Let cool down in the pan then transfer to the cooling rack.
