A batch of Thin Chocolate Chip Cookies which are super crunchy and crispy, yet have a chewy center loaded with chocolate chips.
Oh my, these cookies are not your usual chunky and chewy chocolate chip cookies. Instead, these Thin Chocolate Chip Cookies are super crunchy and crispy, yet have a chewy center.
About These Thin Chocolate Chip Cookies
- These cookies do not require any fancy ingredients and come together very easily. So no chilling time!
- These are structured in a way that the outside has a thin crunchy crust and the middle is rich and chewy.
- The Thin ring that forms around these cookies is the combination of sugar and butter that forms when the cookies are baking in the oven.
- In this recipe, we use both granulated sugar s well as brown sugar. The combination of both sugars makes them moist, flavorful, and deeper in color.
How To Make These Cookies
- It is very important to keep the butter at room temperature. Soft butter blends with the sugars much easier. Beat the butter with both sugars very well. Take your time with this step. Beat until light in color and fluffy.
- Add in the eggs and vanilla, and beat a minute or two longer.
- Sift the dry ingredients, add them to the butter mixture, and using a spatula gently mix all together.
- The last addition is the chocolate chips. We use one cup of half the dark chocolate chips. Yes! that's what makes these Thin Chocolate Chip Cookies exceptionally rich in flavor and delicious. I used mini dark chocolate chips here, however, you can use regular-size chips. I recommend using dark chocolate, just to balance the sweetness.
- Due to the ratio of the ingredients, these cookies spread a lot and that is the reason they are so thin and crispy. So leave at least 2 inches between the dough balls.
