About This Recipe
- This loaf does not require a stand mixer. A hand mixer will do the trick for you.
- This Cranberry Orange Loaf contains fresh cranberries (not dried) and raisins. This makes each bite slightly sour and sweet from the raisins! How about that perfect flavour balance on your palate?
- No panic if you decide to make this loaf when fresh cranberries are unavailable in grocery stores! Frozen cranberries will do the trick. I used frozen ones.
- This recipe calls for half a cup of raisins, which can be golden or brown!
- The liquid in this recipe comes from freshly squeezed orange juice, and to enhance the flavour, we are adding one tablespoon of orange zest.
- After going into the pan, this loaf has streusel on top, made of simple ingredients such as brown sugar, flour, and butter. The streusel becomes crispy once the loaf is baked.
- We drizzle the top with an orange drizzle to make this loaf more fragrant and delicious.
How To Make This Cranberry Orange Loaf
- After sifting all dry ingredients.
- Melt the butter and let it cool down slightly.
- Whisk the egg, vanilla, and sugar until lighter, then add the melted butter and mix well.
- Add the dry ingredients alternating with the orange juice; start and finish with the dry.
- Add the cranberries and raisins at the end, and mix as gently as possible. We do not want the cranberries to burst and bleed into the batter.
- Prepare the streusel by mixing all the ingredients, spreading it all over the loaf, and baking.
- Once the loaf is completely cool, stream the top with the orange drizzle.

Cranberry Orange Loaf

Ingredients
For The Loaf
- 2¼ cups All-purpose flour, Spooned and leveled
- 1½ teaspoon Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- ¾ cup Sugar
- ¼ cup Butter
- 2 tablespoon Oil
- ¾ cup Orange juice, Preferably freshly squeezed
- 1 tablespoon Orange zest
- 1 Egg, Room temperature
- 2 teaspoon Vanilla extract
- ¾ cup Raisins, Brown or golden
- 1 cup Cranberries
For The Stresuel
- ⅓ cup Brown sugar, Packed
- ¼ cup All-purpose flour, Spooned and leveled
- 2 tablespoon Butter, Cubed
- 1 teaspoon Cinnamon
For The Drizzle
- ½ cup Powdered sugar
- 2-3 tablespoon Orange juice
Instructions
How To Make The Loaf
- Preheat the oven to 350°F, line a 9X5 pan with parchment paper and set aside.
- Sift all the dry ingredients and set aside.2¼ cups All-purpose flour, 1½ teaspoon Baking powder, ½ teaspoon Baking soda, ½ teaspoon Salt
- Melt the butter and let it cool down slightly. Add the oil to the butter and mix¼ cup Butter, 2 tablespoon Oil
- Massage the orange zest into the sugar for a few minutes until the orange aroma is released.¾ cup Sugar, 1 tablespoon Orange zest
- Add the egg, vanilla, and melted butter to the sugar and whisk well.1 Egg, 2 teaspoon Vanilla extract
- Add the dry ingredients alternating with the orange juice; start and finish with the dry.¾ cup Orange juice
- Add the cranberries and raisins at the end, and mix as gently as possible. We do not want the cranberries to burst and bleed into the batter.¾ cup Raisins, 1 cup Cranberries
- Pour the batter into the prepared pan, and spread the streusel on top of the batter.
How To Make The Streusel
- Using a fork, roughly mix the brown sugar, cinnamon, and flour. Do not mix fully; we want to have clusters of different sizes.⅓ cup Brown sugar, ¼ cup All-purpose flour, 2 tablespoon Butter, 1 teaspoon Cinnamon
- Spread the streusel all over the batter and bake for 55-60 Minutes. Until an insert comes out clean. Let the loaf cool in the pan for 15 minutes then lift the parchment paper and put the loaf on the cooling rack to cool down.
Make The Drizzle
- Mix the powdered sugar and the orange juice. The mixture should have a pourable consistency but not be too runny.½ cup Powdered sugar, 2-3 tablespoon Orange juice
- Drizzle over the cool loaf.
