About This Recipe
- These Christmas Double Chocolate Cookies are chunky, chewy, decadent, and above all super chocolaty.
- This recipe calls for cocoa powder, chocolate chips, and also two tablespoons of espresso powder. Espresso enhances the cocoa flavor and makes it taste deeper and richer.
- Espresso powder needs to dissolve well before adding it to the batter, so we will mix it with a small amount of warm milk.
- We use brown sugar here, and brown sugar contains molasses which adds flavor and makes the cookies extra moist and soft.
- One important step that contributes to that brownie-like texture and the rich chocolaty flavor is melting the butter. Melting the butter makes the butter's aroma and flavor stand out. It also makes the cookie texture fudgier just like brownies.
- These cookies call for two eggs and the rest of the ingredients are just the basic ingredients that we use in other cookie recipes.
- To have that extra rich and decadent flavor, we add one cup of semi-sweet mini chocolate chips. You can substitute it for milk chocolate.
- And for the top! For obvious reasons I am using green and red M&Ms, however, other kinds of topping can make them look festive such as sprinkles or colored chocolate chips.
How To Make These Christmas Double Chocolate Cookies
- We start with dissolving the espresso powder. Mix the warm milk and espresso powder, and set it aside.
- Melt the butter, remove it from the heat, and transfer it to the bowl of a stand mixer or the bowl you are using for mixing.
- Add the brown sugar to the melted butter and whisk until well blended.
- Add in the eggs and whisk for a good 3-4 minutes. The mixture should become light in color.
- Next, add the dissolved espresso and milk mixture along with vanilla extract.
- Switch to a rubber spatula, add in the dry ingredients in two batches, and gently fold in.
- At last, add the mini chocolate chips and mix.
- Use an ice cream scoop and drop the cookie dough on the lined baking sheet. Place a good amount of green and red M&Ms on top of the dough balls, and bake them for about ten minutes.

Ingredients
- 1 cup Butter, Melted
- 1 cup Light brown sugar, Packed
- 2 tablespoon Espresso powder
- 2 tablespoon Milk, Warm
- 2 Eggs, Room tempreture
- 1 teaspoon Vanilla extract
- 2½ cups All-purpose flour, Spooned and leveled
- ½ cup Cocoa powder, Sifted
- 1 teaspoon Baking soda
- ¼ teaspoon Salt
- 1 cup Semi-sweet chocolate chips, Preferably Mini
- 1 cup Green & red M&Ms for topping
Instructions
- Preheat the oven to 350°F, and line 2 baking sheets with parchment paper and set aside.
- Mix the espresso powder and warm milk to dissolve the espresso.2 tablespoon Espresso powder, 2 tablespoon Milk
- Mix dry ingredients and set them aside.2½ cups All-purpose flour, ½ cup Cocoa powder, 1 teaspoon Baking soda, ¼ teaspoon Salt
- Melt the butter in a saucepan, then transfer the melted butter to the mixing bowl and whisk the butter and melted butter until well blended.1 cup Butter, 1 cup Light brown sugar
- Add in he eggs, and vanilla extracts. Whisk for 3-4 minutes until the mixture is light in color.2 Eggs, 1 teaspoon Vanilla extract
- Switch to a rubber spatula, and gently fold in the dry ingredients and mix.
- At the end fold in the mini chocolate chips.1 cup Semi-sweet chocolate chips
- Use an ice cream scoop and drop cookie dough on the lined baking sheet. Leave two inches of space between them. Place a good amount of green and red M&Ms on top of the cookie dough balls.1 cup Green & red M&Ms for topping
- Bake for 10-12 minutes. Leave the cookies on the baking sheet to cool down, and then transfer to the cooling rack to cool down.
