Preheat the oven to 350°F, grease and flour dust two 8-inch round pans. Set them aside.
Peel and dice the apples and toss them with cinnamon and brown sugar. Set aside.
2 cups Apple, 1 teaspoon Cinnamon, 1 tablespoon Brown sugar
Mix all the dry ingredients and set aside.
2 cups All-purpose flour, 2 teaspoon Baking powder, ½ teaspoon Salt, 1½ teaspoon Apple pie spice
Beat two sugars and butter for three minutes until light and fluffy.
1 tablespoon Butter, 1 cup Granulated sugar, ½ cup Brown sugar
Add the oil and mix well.
1 cup Oil
Add the eggs one at a time and beat after each one. Add vanilla extract and mix.
3 Eggs, 1 tablespoon Vanilla extract
Add the dry ingredients in three passes and mix. Do No Overmix.
Pour the batter into the prepared pans and bake for 30-35 minutes or until an insert come out clean. Let cool in the pan for 10 minutes then transfer to the cooling rack to cool down completely before frosting.
