1cupSemi-sweet chocolate, chopped
¾cupHeavy cream
1teaspoonRum, Optional
Instructions
How to make the chocolate cake
Preheat the oven to 350°F, grease, and flour dust 3X6 or 2X8 inch pan. set aside.
In a large bowl, combine the water, mayonnaise, and vanilla until blended.
1 cup Water, 1 cup Mayonnaise
Sift all the dry ingredients and set them aside.
2 cups All-purpose flour, 3 tablespoon Cocoa powder, 2 teaspoon Baking soda, ½ teaspoon Salt, 1 cup sugar
Gradually add in the mayonnaise mixture until blended. Add the vanilla and mix.
1 cup Water, 1 cup Mayonnaise, 1 tablespoon Vanilla extract
Pour the batter into the prepared pans and bake for 30-35 minutes, or until the insert comes out clean.
Let the cakes cool for 10 minutes then remove from the pan and transfer to a cooling rack, and let cool completely before frosting.
Cream cheese filling
Make the cream ahead of time and keep it in the fridge, until you want to assemble the cake.
Beat the room temperature cream cheese with the clear vanilla extract for 2 minutes until quite soft and smooth. Add in the powdered sugar and mix well.
½ cup Cream cheese, 1 tablespoon Vanilla extract, 2 cups Powdered sugar
Using the whisk attachment, beat the heavy cream until soft picks are formed. This may take about 5- 8 minutes.
½ cup Heavy cream
Using a rubber spatula, fold the whipped cream into the cream cheese. The cream will be a bit soft. Cover the bowl and chill in the fridge until you want to assemble the cake. Then right before assembling the cake, add the crushed Oreos and gently mix.
1½ cup Oreos, About 14 Oreos
Oreo frosting
Sift together the powdered sugar, meringue powder, and salt. Set them aside
Add 2 tablespoon of the heavy cream, and mix. If the buttercream is stiff add one more spoon of heavy cream.
2-3 tablespoon Heavy cream
Add the finely chopped Oreos and gently mix. it is very important not to mix the Oreos too much because they will crash in the buttercream and the buttercream will look brown and Oreos won't be seen. Set aside to assemble the cake.
1 cup Oreos
Chocolate ganache
Heat the heavy cream in the microwave until it starts to simmer on the sides.
¾ cup Heavy cream
Add the chopped chocolate and let sit for a few minutes, then start stirring until smooth.
1 cup Semi-sweet chocolate, chopped
Add the rum if using and mix.
1 teaspoon Rum
Let the ganache cool down slightly, before pouring it over the cake.
