Preheat the oven to 350°F, and line a baking sheet with a silk pad or parchment paper and set them aside.
Sift together all the dry ingredients.
1¾ cup All-purpose flour, ¼ teaspoon Baking Powder, ¼ teaspoon Salt, ⅛ teaspoon Baking Soda
Add the lemon and orange zest to the flour and massage in to release their aroma and flavor.
1 teaspoon Lemon zest, 1 teaspoon Orange zest
Cream the butter and sugar together, until light and fluffy.
½ cup Butter, 1 cup Sugar
Add the egg and the extracts, and mix.
½ teaspoon Vanilla extract, ½ teaspoon Orange extract, 1 Egg
Using a rubber spatula add the dry ingredients and mix. DO NOT OVERMIX.
Make small globes, the size of a small tangerine, Place them on a sheet and chill for 10-15 minutes.
Roll the balls in the sifted powdered sugar and bake for 10 minutes, or until the edges are set, and the top is crackled.
½ cup Powdered sugar
Let cool on the baking sheet for 10 minutes, then transfer to the cooling rack.
