Sift all dry ingredients and set aside.
1¾ cup All-purpose flour, ¾ teaspoon Baking soda, ¼ teaspoon Salt, 1½ tablespoon Cocoa powder
Cream the room-temperature butter and both sugar until light and creamy. Mix for 2 minutes. The mixture will become lighter in color and fluffy.

Add the egg and vanilla extract. Mix well

Next, add the red food color and mix.

Add the dry ingredients and mix. Do not over-mix. Cover the dough and chill it for 1-2 hours.
Preheat the oven to 350°F. Roll the dough into small balls the size of a walnut in the shell. Roll them in granulated sugar.

Place the balls of dough on the lined baking sheet. Leave 2 inches space between them.
Bake them for 10-12 minutes. Once they start cracking, remove them.
Immediately after coming out of the oven, place a Hershey Kiss in the center.
