As we get closer to autumn, I crave deep-flavoured treats like spices, caramel, maple, or pumpkin. These Maple Pecan Cookies are one recipe that screams Fall all over it. They are soft inside yet crispy outside, with many flavours from the maple syrup, spices, and pecans.
Using the paddle attachment, beat the Butter and dark brown sugar for a few minutes. Scrape the bowl to ensure all the sides are mixed in.
¾ cup Butter, 1 cup+1tbsp Dark brown sugar
Add the egg yolk along with both extracts and mix well.
1 Egg yolk, 1 teaspoon Vanilla extract, ½ teaspoon Maple extract
Add the maple syrup and mix until all the ingredients are well incorporated.
⅓ cup Maple syrup
Switch to a rubber spatula. Add the sifted dry ingredients in three parts, mixing well after each addition.
Add the chopped pecans to the last portion of the flour and mix it into the dough.

Use an ice cream scoop to make small globs the size of a small tangerine. Roll each ball into the sugar and cinnamon mixture and place them on the lined baking sheet, leaving 2 inches of place between them.
