Nescafe Cookies

Ingredients
 

  • cup All-purpose flour, Spooned and leveled
  • 1 cup Unsalted butter, Room temperature
  • 1 cup Sugar
  • 2 tablespoon Granulated Nescafe, Un-dissolved
  • 1 tablespoon Vanilla extract
  • 1 Large egg, Room temperature
  • ½ teaspoon Salt

Instructions
 

  • Set the mixer with the paddle attachment and cream the butter, and sugar until light and fluffy.
    1 cup Unsalted butter, 1 cup Sugar
  • Add the egg, and vanilla extract and mix well.
    1 tablespoon Vanilla extract, 1 Large egg
  • In a separate bowl sift the flour, and salt and add to the above mixture.
    2½ cup All-purpose flour, ½ teaspoon Salt
  • Lastly, add the granulated Nescafe and gently mix.
    2 tablespoon Granulated Nescafe
  • Divide the dough in half and press each half into a flat disc. Wrap in plastic wrap and chill for 2 hours
  • Before removing the cookie dough from the fridge, preheat the oven to 350°F, and prepare two large baking sheets with parchment paper. Set aside.
  • Roll out the cold dough on a lightly floured surface to about ⅛" thickness and cut with cookie cutters.
  • Place the cut cookies on the lined baking sheets and bake for 10 minutes, or until the edges start to slightly brown.
  • Remove from the oven and cool down for a few minutes, then transfer to a cooling rack.

Notes

  • If refrigerate for more than 2 hours, let the dough sit at room temperature for half an hour before rolling out.
  • DO NOT  overmix the dough after adding the Nescafe granules. Overmixing will cause the granules to break down into the dough and make the cookies dark and not very pretty.
