Set the mixer with the paddle attachment and cream the butter, and sugar until light and fluffy.
1 cup Unsalted butter, 1 cup Sugar
Add the egg, and vanilla extract and mix well.
1 tablespoon Vanilla extract, 1 Large egg
In a separate bowl sift the flour, and salt and add to the above mixture.
2½ cup All-purpose flour, ½ teaspoon Salt
Lastly, add the granulated Nescafe and gently mix.

Divide the dough in half and press each half into a flat disc. Wrap in plastic wrap and chill for 2 hours
Before removing the cookie dough from the fridge, preheat the oven to 350°F, and prepare two large baking sheets with parchment paper. Set aside.
Roll out the cold dough on a lightly floured surface to about ⅛" thickness and cut with cookie cutters.
Place the cut cookies on the lined baking sheets and bake for 10 minutes, or until the edges start to slightly brown.
Remove from the oven and cool down for a few minutes, then transfer to a cooling rack.
