Preheat the oven to 350°F, and line two baking sheets with parchment paper.
Whisk together all the dry ingredients and set them aside.
3¼ cups All-purpose flour, ¼ teaspoon Salt, 1 teaspoon Baking soda, 1 teaspoon Cinnamon, 1½ teaspoon Cream of Tartar
Using the paddle attachment, beat the soft butter with sugar until creamy and light.
1 cup Butter, 1⅓ cup Sugar
Add in the eggs and vanilla extract. Mix well.
2 Egg, 1 tablespoon Vanilla extract
Switch to a rubber spatula and fold in the dry ingredients. Gently mix the ingredients. Do not overmix.
Roll the dough into small balls, and roll each ball in the cinnamon sugar mixture
½ cup Sugar, 2 tablespoon Cinnamon, 1 teaspoon Vanilla sugar
Place them on the lined baking sheets. Leave at least 2 inches of space between them. Bake for 10-11 minutes.
Cookies are ready when their top has some cracks, and edges are set. The center might look raw and that's okay. They keep baking when out of the oven.
