Preheat the oven to 375°F, and line a 9X5 inch loaf pan with parchment paper. Make sure to leave some extras on the sides for lifting.
Place the bananas on a baking sheet and sprinkle the brown sugar on them. Make sure bananas are covered with brown sugar.
3 Bananas, 2 tablespoon Brown sugar
Place in the oven and bake until the brown sugar is melted and the bananas turn golden. About 10 minutes.
Sift together flour, baking soda, salt, cocoa powder, and espresso powder. Set it aside.
½ teaspoon Espresso powder, 1¾ cup All-purpose flour, ½ cup Cocoa powder, 1½ teaspoon Baking soda, 1 teaspoon Salt
Melt the butter, and mix with oil and both sugars. Mix well until all is incorporated.
½ cup Butter, ⅓ cup Oil, 1 cup Brown sugar, ¼ cup Granulated sugar
Add in the eggs and vanilla extract, and mix well.
2 Eggs, 1 tablespoon Vanilla extract
Add the golden bananas, and mix well.
Add the sifted dry ingredients to the wet ingredients and mix until just incorporated. DO NOT OVERMIX.
Gently fold in the chopped chocolate chips and the chopped chocolate chips.
¾ cup Semi-sweet chocolate chips, ⅓ cup Milk chocolate
Pour the batter into the prepared pan, and sprinkle the top with a few chocolate chips and chopped pieces.
Reduce the oven temperature to 350, and bake it for 50-60 minutes
Leave the pan on a cooling rack for 15 minutes, then remove it from the pan and leave it on the cooling rack to cool down completely.
